CHOCOLATE STRAWBERRY CUPS
Steps:
- Bring a small pan with 1 inch of water to a boil over medium-low heat. Place the chocolate in a small bowl and place over the simmering water. When the chocolate is almost halfway melted, remove the bowl from the heat to a towel. Continue to stir with a rubber spatula until completely melted.
- Spoon 1 teaspoon of chocolate into each of 12 cavities in a silicone mini muffin mold. Swirl the mold over a rimmed baking sheet to coat the sides of each mold. Chill in the refrigerator to set completely, about 45 minutes.
- Meanwhile, whisk together the cream, sugar and vanilla. Carefully unmold the chocolate cups and trim any excess with kitchen scissors. Fill each cup with a spoonful of strawberries and a dollop of cream. Serve immediately.

- Gently rinse strawberries and dry on paper towels (berries must be completely dry). Line cookie sheet with waxed paper.
- In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring frequently. Remove from heat.
- Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined cookie sheet.
- Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).

- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

- Wash and dry the strawberries completely. Carefully hull the strawberries with a paring knife, removing the green leafy tops.
- Place the yogurt in a bowl and stir until smooth. Carefully insert a fork into the hulled end of one strawberry (if you have a small cocktail fork, this works great). Dip the strawberry into the yogurt, turning it to coat the entire berry. Place on a baking sheet lined with parchment or a wire rack. Repeat for the remaining berries.
- Place the baking sheet in the freezer and freeze until firm, about 1 hour. At this point, if you want a thicker yogurt layer, dip the strawberries in the yogurt one more time and refreeze (I did two layers of yogurt in the photos).
- Melt the chocolate in a small bowl in the microwave, stopping to stir it often so that it doesn’t scorch. Pour the melted chocolate into a small sandwich bag and cut off the tip of one corner. Using the bag like a piping bag, drizzle some chocolate onto each strawberry. Place the berries back in the freezer and freeze until solid.Leave the strawberries out at room temperature for about 10 minutes before serving. Serve whole or sliced in half lengthwise. Enjoy!
