TRIPLE-CHOCOLATE QUICK BREAD

Every year around this time, I'll make this bread for my family. I've also given it as a homemade gift. It's pretty wrapped in colored foil or put in a tin. -Karen Grimes, Stephens City, Virginia

Triple-Chocolate Quick Bread image

Steps:

  • Ina microwave-safe bowl, melt 1 cup chocolate chips; set aside to cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs and cooled chocolate; mix well. Add applesauce and vanilla; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in the remaining chocolate chips. , Spoon into four greased 5-3/4x3x2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to wire racks. , For glaze, melt chocolate chips and butter in a small heavy saucepan; stir in cream. Remove from the heat; stir in confectioners' sugar, vanilla and salt. Drizzle over warm breads. Cool completely.

Double Chocolate Zucchini Bread image

Steps:

  • Preheat the oven to 350F and grease an 8x5" loaf pan.
  • In a food processor, puree the spinach, oil, banana, applesauce, sugar, tofu and vanilla until smooth.
  • Add the salt, cinnamon, chili powder and cocoa and puree until smooth.
  • Pulse in the flours, baking soda and baking powder until just combined, then pulse in the zucchini, chocolate chips and pumpkin seeds.
  • Scrape into the loaf pan and smooth the top.
  • Bake for 1 1/2 hours, or until it tests done.
  • Cool in the pan for 30 minutes, then unmould onto a wire rack.

  • Using mini chips works better than the larger chips. You can add them in the beginning.
  • I find the addition of a tesp. of Cinnamon to be nice, this is optional.

Steps:

  • Generously grease 12-cup Bundt® pan. In large bowl, combine 2 1/2 cups of the flour, cocoa, sugar, salt, baking soda and yeast; mix well. In small saucepan, heat buttermilk and butter until very warm (120 to 130°F.). Add warm liquid and eggs to flour mixture; beat at low speed until moistened. Beat 3 minutes at high speed.
  • By hand, stir in remaining 1 cup flour and 1 1/2 cups chocolate chips. Spoon dough evenly into greased pan. Cover with plastic wrap and cloth towel; let rise in warm place (80 to 85°F.) until light and doubled in size, 30 to 40 minutes.
  • Heat oven to 350°F. Uncover dough; bake 35 to 45 minutes or until toothpick inserted near center comes out clean. Immediately invert bread onto wire rack; remove pan. Cool 45 minutes or until completely cooled.
