Double Stuffed Brownies image

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Grease the bottom of a jellyroll pan, then line with parchment paper and grease the paper.
  • In a microwave-safe bowl, melt the shortening and chocolate together, stirring every 30 seconds and cooking until melted. Set aside to cool slightly.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs well. Add the granulated sugar and vanilla; beat to combine thoroughly. Beat in the chocolate mixture.
  • In a medium bowl, whisk together the flour, baking powder and salt. Stir into the chocolate mixture. Spread the batter evenly in the prepared pan.
  • Bake the brownies until a toothpick inserted in the center comes out clean, 12 to 15 minutes. Remove from the oven and let cool in the pan for 10 minutes. Release the edges with a butter knife, and turn the brownies out onto a cutting board to cool completely. Cut in half, creating two large, equal pieces.
  • For the filling: In the bowl of a stand mixer fitted with the paddle attachment, combine the shortening and vanilla. Add the confectioners' sugar, 1 cup at a time, adding 1 tablespoon of water between each addition and mixing until you get a spreadable consistency. You may not need to add all the water.
  • Spread the filling over one of the large brownie pieces, and cover with the other piece like a sandwich. Cut into 2-inch" squares.

Double-Decker Peanut Butter Brownies image

Steps:

  • Make the Nut Butter Layer
  • Preheat oven to 350°F. Line an 8x8" baking dish with 2 overlapping pieces of parchment paper, leaving at least a 2" overhang on 2 sides.
  • Whisk eggs, brown sugar, salt, and vanilla in a medium bowl until well combined. Using a rubber spatula, stir in peanut butter until a smooth, thick batter forms. Scrape into prepared baking dish and spread in an even layer.
  • Make the Cocoa Layer and Assemble
  • Using an electric mixer or a stand mixer fitted with the whisk attachment on medium-high speed, beat eggs, granulated sugar, and brown sugar in a large bowl until mixture is light, smooth, and doubled in volume, 3-4 minutes. With mixer running on low speed, slowly beat in butter, then add vanilla and salt and beat to combine. Add cocoa powder and cornstarch. Beat on low speed, scraping down sides of bowl as needed, until incorporated. Increase speed to medium-high and beat until mixture is thick and holds its shape, about 30 seconds. Pour over nut butter layer and smooth top.
  • Add your choice of toppings or leave top smooth-they're all good options.
  • Bake brownie until top is puffed, glossy, and starting to crack, and the center is just set (it shouldn't jiggle when shaken, but the chocolate layer will still be very gooey), 25-30 minutes. Let cool.
  • Remove brownie from pan using parchment overhang, then cut into 16 squares.

Delicious double-peanut butter "brownies" with chocolate frosting... just divine! From Taste of Home magazine. I cheated and used prepared frosting instead of the recipe because I was running out of time. They tasted fantastic anyway.

Peanut Butter Blondies image

Steps:

  • In a large mixing bowl, cream the peanut butter, butter and sugars. Beat in eggs an vanilla.
  • Combine the flour and baking powder, and add to creamed mixture alternately with milk. Stir in chips.
  • Spread into a greased 13 x 9 x 2 in baking pan. Bake at 325 for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  • For the frosting, in a small mixing bowl combine butter, cocoa, milk, corn syrup and vanilla. Gradually add confectioners' sugar and beat until smooth.
  • Frost brownies and sprinkle with chips. Cut into bars.

Steps:

  • Heat Oven to 350 degrees F. Grease 13" X 9" baking pan.
  • Beat butter and peanut butter in large bowl.
  • Add granulted sugar and brown sugar, beat well.
  • Add eggs, one at a time, beating well after each one. Blend in vanilla.
  • Stir together flour, baking powder and salt; mix into peanut butter mixture, blending well.
  • Stir in peanut butter chips.
  • Spread half of batter into prepared pan; spoon syrup over top. Carefully spread remaining batter; swirl with butter knife for marbled effect.
  • Bake 35-40 minutes or until lightly browned.
  • Cool completely in pan or on wire rack.
  • Cut into squares.
