DOWN HOME COLLARD GREENS

A delicious collard green recipe that goes well with any soul food or poultry entree.

Down Home Collard Greens image

Steps:

  • Put collard greens in a pot full of lightly salted water; bring to a boil, reduce heat to medium-low, and cook until tender, about 1 hour. Drain.
  • Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain the bacon on paper towels.
  • Melt butter in a large pot over medium heat. Cook and stir onion in melted butter until tender, 7 to 10 minutes. Stir bacon, chicken bouillon, water, garlic, oregano, thyme, and savory into the onion; bring to a boil. Stir collard greens into the mixture and simmer 5 minutes. Pour milk over the mixture, stir, and cook another 5 minutes.

Steps:

  • Thoroughly wash collard greens. Be sure to pull leaves apart and remove any sand. Chop collard greens.
  • In a medium saucepan, bring 4 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover for about 90 minutes. Cook ham hocks until slightly tender. In the same saucepan, add remaining ingredients and collard greens.
  • Cover and cook greens for 1 to 1 1/2 hours.

5 bundles collard greens
4 cups salted water
3 large smoked ham hocks
1 cup sugar
Salt
1 teaspoon crushed red pepper flakes

Steps:

  • In a large pot, combine the broth, water, ham hocks, garlic, vinegar, sugar and red pepper. Bring to a boil over medium-high heat. Add the collard greens in batches, covering the pan and waiting for each batch to wilt before adding the next batch. Transfer to a 3 1/2 quart slow cooker. Cover and cook until the greens are very tender, 4-5 hours on low. Remove the ham hocks, remove and discard the skin. Remove the meat from the bones, coarsely chop the meat, and return to the slow cooker. Season the greens with salt to taste.

Steps:

  • Wash collard greens to remove all grit. Remove and discard hard stems. Place greens in bunches, then roll up; cut crosswise into strips.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add onions, peppers and garlic to drippings in skillet; cook 2 to 3 min. or until crisp-tender, stirring frequently. Stir in broth and vinegar. Add collard greens; mix lightly. Bring to boil, stirring occasionally; simmer on medium-low heat 45 min. to 1 hour or until collard greens are tender. Remove from heat. Stir in bacon.

Steps:

  • Wash greens in a colander.
  • Chop into bite-sized pieces.
  • Throw all ingredients into a large pot and cover.
  • Bring to a boil, stirring occasionally, the reduce heat and simmer.
  • Greens are done when they have shrunk down and are cooked through, usually about a half hour, but you can let it simmer much longer.
  • Serve with its liquid.

1 lb collard greens (or 1/2 collards, 1/2 kale)
1 onion, chopped
1/2 cup prepared salsa or 1 chopped tomato
2 -4 garlic cloves, chopped
1 1/2 cups water
1/2 cup cider vinegar
