Steps:

  • In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

2 tablespoons olive oil
1 1/2 cups diced onions
1/4 teaspoon kosher salt
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground white pepper
1/2 teaspoon kosher salt

SOUR CREAM AND ROASTED RED ONION DIP

Here's how to make onion dip without standing near the stove for an eternity, waiting for onions to caramelize: Roast rings of onion in the oven with the teeniest bit of sugar for 40 minutes for effortlessly faux-caramelized onions. Red onions are naturally a bit sweeter and mellower than white ones, especially when they get brown and slouchy, but lemon juice, chives and raw garlic will perk them right up. The creaminess - what we're here for - comes from three sources: sour cream, mayonnaise and Greek yogurt, a nice counter to the crisp potato chips you'll, of course, serve it with.

Steps:

  • Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
  • Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
  • Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
  • Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

Steps:

  • Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.) Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt, and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.
  • Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth. Add the onions and mix well. Taste for seasonings. Serve at room temperature.

2 large yellow onions
4 tablespoons unsalted butter
1/4 cup vegetable oil
1/4 teaspoon ground cayenne pepper
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise

  • Sweet Vidalia onion dip: This easy spread can be assembled ahead of time and baked in the oven right as guests begin to arrive. If you can't find Vidalia onions, go ahead and substitute another sweet, mild variety such as Bermuda or Walla Walla.
  • Pan-fried onion dip: How good is this dip? According to blogger Michelle Lettrich, it's "hide-it-and-the-potato-chips-from-everyone-else-so-I-can-have-it-all-to-myself kind of amazing."
  • Bacon and onion dip: There's no denying that smoky-salty bacon plays well with sweet, sauteed onions. In this recipe, the flavors of these superstar ingredients are punched up even more with the addition of Worcestershire sauce, cumin, mustard and Greek yogurt.
  • Red onion chutney: If you typically only eat red onions raw on burgers or in salsa, it's time to start experimenting with them on the stove. This chutney might not be creamy like a traditional dip, but it's a worthy (and elegant) addition to a cheese plate.
  • Cheesy beer-caramelized onion and artichoke dip: Can't choose between artichoke and onion dip? Now you don't have to, thanks to this creative combination of beer-caramelized onions and a yogurt-based artichoke spread.

  • Preheat oven to 400 degrees. Place thinly sliced onions (I use a mandolin) into a Dutch oven. Add oil and balsamic and stir to coat. Place the lid on the Dutch oven and place in the center rack of the oven. Cook for 15 minutes and then stir.
  • While the onions are cooking, slice 1/4 inch off the top of the head of garlic, so the cloves are exposed but stay intact. Drizzle a teaspoon of oil on top, and wrap in foil. After the onions have cooked for 15 minutes, place the wrapped garlic on the oven rack next to the Dutch oven to roast. It should take about 30-40 minutes to soften completely.
  • Continue to cook the onions in the oven stirring every 15-20 minutes, until they have reduced to about 1 1/2 cups and are a deep golden brown color. This should take about 50-60 minutes.
  • When the garlic is roasted and the onions are caramelized, allow them to cool at room temperature while you prepare the rest of the dip.
