This traditional wassail recipe came from a dear friend in Fort Wayne, Indiana, where we lived for many years. Since it's warm, wonderful and non-alcoholic, we've even served it at church. This wassail drink is also perfect for a holiday open house. -Maryellen Hays, Wolcottville, Indiana

- In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

GRANDMA'S WASSAIL
An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

Steps:
- Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.
- Place cloves and cinnamon in a tea ball; add ball to the apple cider mixture. Simmer mixture until warmed through, about 15 minutes. Serve from pot with large ladle.

HOLIDAY WASSAIL COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Put the teabags into a mug. Pour 1 cup of boiling water into the mug. Add the cranberries and raisins into the tea and set aside to steep and rehydrate.
- Meanwhile, put the butter and sugar in a stand mixer fitted with a paddle attachment. Beat until fluffy, about 2 minutes. Add in the egg and beat until just combined. Scrape with a spatula if needed.
- Whisk together the flour, apple cider mix, cinnamon, allspice, baking soda, salt, coriander and ginger in a large bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining dry ingredients until a thick dough comes together. Strain the cranberries and raisins and discard the tea. Add the cranberries and raisins to the dough and beat just until evenly distributed.
- With a 3-tablespoon scoop, make mounds of dough and put onto the prepared baking sheets, leaving about 1 1/2 inches of space between each cookie.
- Bake until golden brown, 12 to 14 minutes. Serve warm.
DRY WASSAIL MIX
I keep a full can of this in my cupboard all winter long. Yummy! Perfect for wintertime gift-jars!

WASSAIL
England's spin on the Christmas cocktail was the ancient beverage known as wassail, essentially Middle English for "cheers." The base alcohol was beer, mead, or wine, heated with sliced apples and spices and served in the customary wassail bowl. This version, scented with cloves and allspice, cleverly combines apples with cider and Calvados.

- Sprinkle apple slices with maple sugar, and roast at 400 degrees for 15 minutes for garnish if desired.
- Combine allspice berries and cloves in a cheesecloth sachet. Heat cider and spice sachet over medium-high heat for about 3 minutes.Remove from heat; cover, and let steep for 30 minutes. Stirin 2 tablespoons maple sugar, and heat over medium heatuntil it dissolves. Reduce heat to low and add ale. Heat for 8 minutes.Add Calvados and heat for 3 minutes more. Removesachet; discard.
- Divide among 4 to 6 heatproof glasses. Garnish with roasted apple slices if using.

Leave on very low heat. Beat the egg yolks until light and lemon-colored. Beat the whites until stiff and fold them into the yolks. Strain the wine mixture and add gradually to the eggs, stirring constantly. Add the brandy. Pour into a metal punch bowl, float the apples on top and serve in 8-ounce mugs.

RED-WINE WASSAIL
This is a great way to serve wassail for a group of good friends; the apples are a terrific addition but not necessary, and the recipe is easily halved. If you have leftover wassail, reheat it gently in the microwave.

- In a large saucepan or kettle, combine the apple juice, sugar, almonds and raisins; slowly stir in the red wine.
- Take a large piece of cheesecloth and place the cinnamon sticks and 24 whole cloves on it; with string, tie it up to make a small bundle and drop this into the red wine mixture.
- Heat slowly over low heat; don't let it boil.
- Meanwhile, make this unique garnish: stuff the centre of each apple with 3 tbsp sugar and stick each apple with a few whole cloves.
- Spray a baking dish with non-stick cooking spray and place the apples in it; bake, covered, at 350F for 45 minutes.
- Bake the apples about an hour or so before you want to serve the wassail.
- Pour the heated wassail into a large punch bowl, discarding the spice bag, and then add the baked apples; they are a treat for those still around when the wassail is gone!
