SWEET AND SPICY BACON BITES

Steps:
- Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
- Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
- Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.
CANADIAN BACON & CHEESE OMELET
This is a quick and easy bunch dish. Since canadian bacon is cooked already it just has to be heated.

- Whisk eggs and cream together.
- Melt butter in a large skillet. Pour in eggs hot, lifting edges into center allowing uncooked egg to reach pan.
- When egg is set add the ham and cheese to one half of the omelet. Fold over other half cook for 15-25 seconds and invert onto a plate.

D'S ELEGANT BACON BITES (OAMC)
I created the filling for this recipe specifically for my dearest friend, D. This is my personal version of the bacon bite recipe. It is full of complimentary flavors, easy to put together, and you can freeze them or serve them right away. I promise they will knock your socks off and those of your guests. The best part is that you can freeze them and pull a few out when you need them; make ahead for a party or bake them right away.

- Place room temperature cream cheese in the microwave for 30 seconds to make easier to stir. Mix together all of the ingredients, except the bleu cheese, until smooth. gently fold in the bleu cheese; set aside.
- Trim the crusts from the slices of bread. Use a rolling pin or a heavy bottle to roll over each slice of bread to lightly compact it. Otherwise, the bread may crack and split as you try to roll it. Spread the slices with the filling, covering it completely, trying not to overfill. Roll the bread up from the short side, pressing down just enough to make it stick to itself.
- Wrap a slice of bacon around the roll, overlapping the bacon to cover the bread completely. Trim off any excess bacon once you reach the end. Do not cover the ends of the roll with the bacon.
- Freeze the wrapped rolls for 30 minutes to firm them up. You can freeze these for OAMC (Once A Month Cooking). I have also baked them immediately after rolling them with no problem *as long as the bacon remains cold*.
- To bake, preheat the oven to 350°F Lightly grease a baking sheet, or line it with parchment paper.
- Slice the rolls in thirds and place on the baking sheet, cut side down. Bake for 30 to 35 minutes (5 minutes longer if baking from frozen), until the bacon is crisp and the tops are golden brown.
- Remove from the oven and place on a serving platter. The filling is HOT, please allow to cool for 5 minutes before serving.

CANADIAN BACON ONION QUICHE (OAMC)
A delicious make ahead that you can freeze for later-- how convenient is that. More time to enjoy my family! Timing does not include chilling pastry. Hope you like as much as we have. I have changed the original method for making pastry and think it works much better.

- In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
- Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
- Roll out pastry to fit a 9 inch pie plate.
- Transfer pastry to greased pie pan.
- Trim pastry to 1/2 inch beyond edge of plate; flute edges.
- In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
- Remove skillet from heat.
- Stir in garlic and set aside.
- Put cheese at bottom of pastry, top with Canadian bacon.
- in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
- Pour into pastry shell.
- At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
- TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

- Place the eggs in a large pot in a single layer and fill with water to cover by 1 inch. Cover the saucepan and bring the water to a boil; immediately remove from the heat and let the eggs stand in the hot water for 15 minutes. Drain. Cool the eggs under cold running water in the sink. Peel and halve lengthwise. Separate the yolks from the whites, placing the yolks in a bowl; arrange the egg whites with the rounded side down onto a serving platter.
- Place the bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate; chop.

HOMEMADE FRESH BACON BITS
Fresh is just so much nicer then the pre-packaged kind that uses picnic bacon and tastes like cardboard. These fry quickly and you don't have to crumble the slices after frying them. There is no need to separate the pieces. They will separate during cooking. Use these in any recipe calling for crumbled bacon or bacon bits. Perfect for salads and baked potato toppings or twice baked potatoes.

- Partially freeze your package of bacon so that it holds together easier while slicing.
- Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide.
- Turn the bacon and cut the strips into pieces also about 1/4 in wide.
- Sprinkle with pepper.
- Fry over a medium high heat until crisp.
- Remove with a slotted spoon and drain on paper towels.
- You can freeze this for later use by placing the bacon bits in a single layer on a cooking sheet. Once they are frozen, place them in a zip lock bag for use in recipes, salads or baked potatoes. Freezing this way allows you to be able to take out just what you need without thawing the entire bag of frozen solid bacon bits.
