EASTER DEVILED EGGS

A very easy, special touch for Easter and fun to do at baby showers as well. Do some plain white ones to keep everyone happy.

Steps:

  • Place eggs into a large saucepan, cover with cold water, and bring to a boil. Let eggs boil for 3 minutes; turn off heat, cover pot, and let eggs cook in hot water for at least 20 minutes. Drain and cover eggs with cold water. Peel cooled eggs.
  • Cut hard-cooked eggs in half lengthwise and remove yolks; mash yolks in a bowl with creamy salad dressing, salt, black pepper, hot sauce, and dry mustard until smooth.
  • Place red, blue, and green food coloring into 3 different bowls and add about 1 cup water to each bowl. Steep 8 egg white halves in each bowl, tinting the egg whites pink, light blue, and green. If color is too pale, add more coloring to bowls. Drain colored egg whites on paper towels.
  • Pipe or spoon egg yolk filling into colored egg white halves; cover and chill before serving, at least 30 minutes.

Steps:

  • Put eggs in a pot of cold water. Turn stove on high (turn down heat to medium once water starts to boil). Cook for a total of 23 minutes. Combine miracle whip, sugar, mustard, vinegar, salt and pepper in bowl. Put food coloring in mugs and make your own colors. Empty hot water out of pot and fill with cold water and let eggs cool down for several minutes. Peel shell off of eggs and cut in half. With a spoon, remove cooked yolk from eggs and put in bowl with mixture. Blend with hand mixer until smooth. Take cooked egg whites and place in mug with spoon. Allow to sit in mug for 30 seconds or more. Remove egg with spoon and place on paper towel to remove excess food coloring. Place dried egg on tray. Spoon yolk mixture into each egg. Sprinkle top with paprika. Allow to cool in fridge for 2 hours.

Steps:

  • Halve eggs lengthwise and scoop yolks into a bowl. Mash yolks with a fork; stir cream cheese spread, mayonnaise, sweet relish, brown mustard, garlic, hot pepper sauce, salt, and black pepper into yolks.
  • Fill egg whites with yolk mixture; sprinkle deviled eggs with chives. Store covered in refrigerator.

Steps:

  • Remove the shells from the hard boiled eggs and slice each egg in half. Remove the yolks from the egg halves and place in a bowl. Set the yolks aside. Get enough glasses or mugs for the number of colors you want to use. Fill the mugs or glasses 2/3 of the way full with cold water. Add 3 drops of desired food coloring along with 1 teaspoon vinegar to each mug or cup. Place egg whites in the mugs and allow to sit in the food coloring until desired color is reached. I could fit 3 egg whites in each of my mugs at a time. Remove whites from dye and drain on a plate lined with a couple of paper towels. Take the reserved yolks and mash them with a fork. Then mix the rest of the ingredients with the mashed yolk. Pipe or spoon the yolk mix into the colored egg whites.

10 hard boiled eggs

Steps:

  • Slice through the top 1/3 of each egg, ensuring some of the yolk is included in the slice. Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer to a bowl.
  • Mix egg yolks, mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper together in a bowl. Fill a piping bag or a plastic bag with a corner snipped with the egg yolk mixture. Pipe egg yolk mixture into the hollowed egg whites creating the 'chick', ensuring there is enough filling to add 'eyes' and a 'beak.'
  • Slice small wedges out of the carrot rounds creating 12 'beaks'. Add a 'beak' to each 'chick'.
  • Slice olive pieces into small squares to be used as 'eyes.' Add 2 'eyes' to each 'chick.' Place the egg tops onto each 'chick' to look like a chick peaking out of the egg.

  • Peel 12 hard-boiled eggs. With a sharp knife, slice off a very thin layer from the base of the egg - this will give it a flat surface to stand on a platter. Cut off a generous top third of the egg. Squeeze around the egg base gently to loosen the yolk and it should pop right out. Keep the lids paired with their bases.
  • In a medium mixing bowl, combine 12 cooked yolks and mash well with a fork. Add 1/3 cup mayonnaise, 1 1/2 tsp dijon (or add to taste), 1/4 tsp garlic powder and 1/8 tsp salt, or season to taste. Mash everything together until smooth. Transfer mixture to ziploc or pastry bag and pipe generously into egg bases. Place top 1/3 back over the base and press down slightly to adhere.
  • For the eyes, poke through an olive with a plastic straw several times then gently squeeze down the straw and the little circles of olives will pop right out. For the beaks, thinly slice a few rings of carrot and cut each ring into sixths. Insert 2 olive spots for eyes and 2 carrot wedges the beak. Set chicks on a platter and garnish with fresh parsley or dill to give them that "free range" feel.
