EASY APPLE CAKE
After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. Even better, it 's quick to fix and, served warm with whipped cream or a dollop of frozen custard, one of my family's very favorite recipes for decades. -Sherry Ashenfelter, Waterville, Ohio

- Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

EASY APPLE CAKE
This is my adopted recipe and I've made it now. It isn't like i think a cake is, it's more like a cobbler, It is very tasty and easy to make. I did use the food processor to mix Step 2. I made it in 8X12 inch dish but I think 8X8inch would be better, I baked for 33 minutes

Steps:
- Preheat oven to 350 deg F.
- Mix together 1/4 cup sugar and 1/2 t cinnamon.
- Place a layer of apples in greased baking dish, sprinkle with half the sugar-cinnamon mixture, cover with remaining apples and cover with remaining sugar-cinnamon.
- Cream 1/2 cup sugar and butter.
- Add egg and vanilla and mix well.
- Stir in flour and baking powder and spoon over apples, spreading it as best as you can.
- Bake 30 minutes.
- Best served warm, with vanilla ice cream.

- Preheat oven to directions on box. Mix cake mix to directions on box, using 1/2 cup water and 1 egg. Grease a 9 by 9-inch square cake pan or disposable cake pan with butter. Pour in cake batter. Toss apples with cinnamon and sugar and sprinkle on top of cake batter. Bake 20 to 25 minutes. Serve warm cake squares with small scoops of butter pecan or rum raisin ice cream.

- Pre-heat oven to 350 degrees. Grease or spray and flour your pan. I either use a 9X13 or a bundt pan.
- Core and chop the apples first so that you can put the sugar on them to extract part of the juice from the apples. Sprinkle 1 C sugar over the apples in a 4 C measuring cup if you have one, otherwise just in a bowl.
- Cream the butter, 3/4 C sugar and eggs till smooth. Add remaining ingredients, except apples. Mix until smooth. Will be very stiff. Add apples. If not much juice has formed, like less than 1/4 cup, add about 1/4 cup water to rinse out the bowl or measuring cup. I live in the rockies so it is really arid here.
- Spread in pan to fill evenly.
- Bake for 30- 40 minutes. Check middle of pan to see if done. If pick or spagetti comes out clean, then it is done. Cool slightly and serve. Can serve with a sauce, (rum, vanilla, caramel, and lemon are good), ice cream, or whipped cream. Or in your hand. Nuts are a favorite addition of many people, but we don't like them in our family so I never add them.
