EASY AS "PIE" TURNOVERS
Everybody loves a home made turnover. These are easy and home-made...well at least people think they are! I made apple-cinnamon-raisin and cherry turnovers, but you could really add any kind of pie filling and get creative!

- Preheat oven to 425. Lightly spray baking sheet with PAM.
- Stir flour and salt together. Mix in squared butter and cream cheese until coarse crumbles and is sticky. Form dough into a ball (you can use some ice cold water- 1 or 2 tbsp- if you need to add some "stick"...shouldn't need to though). Lay out on a floured surface and using a floured rolling pin, roll dough out to pretty thin (not too thin so it will break when you work with it but you dont want thick dough. Cut into 4 in x 4 in squares.
- Lay each square on baking sheet and put pie filling on it. Fold on corner over and press down around mixture so that filling doesnt come out the sides. Use the back side of a fork to make little indention around the edges.
- OPTIONAL: For my apple turnovers, i put apple pie filling (cutting the apples into smaller pieces), raisins, and a dash of cinnamon. I then melt butter and brush ontop of turnovers and sprinkle with a bit more cinnamon. For my cherry turnovers, i add either dark chocolate shavings or a cube of cream cheese).
- Bake in the over for 15 minutes until golden brown. Immediately remove from baking sheet and cool on a rack, about 15 minutes.
- Icing: mix powdered sugar and milk and glaze over. OPTIONAL: for my apple turnovers, i do the regular glaze and i also make a glaze with apple juice and powdered sugar and also drizzle on turnover. For the cherry turnovers with dark chocolate on the inside, i made a thick chocolate glaze and drizzle that on as well as the normal white glaze.
- Serve WARM with some vanilla ice cream. nuttin' better y'all.
QUICK CHERRY TURNOVERS
Refrigerated crescent rolls let you make these fruit-filled pastries in a hurry. My family loves these turnovers for breakfast, but they're so delicious, they'd be welcome any time of the day. Feel free to experiment with other pie fillings as well. -Elleen Oberrueter, Danbury, Iowa

- Preheat oven to 375°. Unroll crescent dough and separate into four rectangles; place on an ungreased baking sheet. Press perforations to seal. Place 1/4 cup pie filling on one half of each rectangle. Fold dough over filling; pinch edges to seal. Bake 10-12 minutes or until golden. , Place confectioners' sugar in a small bowl; stir in enough milk to achieve a drizzling consistency. Drizzle over turnovers. Serve warm.

APPLE TURNOVERS

Steps:
- Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
- Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
- Preheat the oven to 400 degrees F (200 degrees C).
- Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
- Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
- To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.

LYDIE'S PIE CRUST / APPLE TURNOVERS
The best recipe in my arsenal: my aunt Lydie's famous french pie crust. Perfect for use in making mini apple turnovers.

Steps:
- For Crust:.
- Add dry ingredients to a large bowl.
- Slice butter stick by stick and put into bowl.
- Mix with clean hands until dough is the texture of sand.
- Add ice water a little at a time (while continuing to mix with hands) until a doughy texture. Note: Be careful to go slowly and not put too much water inches.
- Chill one hour.
- For turnovers:.
- (Preheat oven to 375 degrees).
- Remove dough from refrigerator and roll out into 6 to 8 inch circles.
- For each turnover, place slices of apples on half of each dough circle (leaving a rim for crust). Sprinkle cinammon and sugar on top of apples and place a slice of butter atop the pile.
- Dip your finger in cold water and moisten the entire edge of your dough circle.
- Fold the dough over the apples and press/pinch around edges to seal the turnover.
- Poke a few holes in the dough over the apples, brush with egg white and sprinkle sugar on top.
- Repeat and place turnovers on a baking sheet. Bake for 15 minutes at 375 degrees, then lower oven temperature to 350 degrees for 25 minutes. Turnovers are done when golden brown.

- In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll dough into a 12x6-in. rectangle., Cut remaining butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 in. of edges. Fold unbuttered third of dough over middle third. Reduce heat; simmer, uncovered, until apples are tender, stirring often, 5-10 minutes. Remove from the heat., In a small bowl, combine egg and water. Roll dough into a 12-in. square; cut into four squares. Brush with half of the egg mixture. Spoon about 1/4 cup filling on half of each square; fold dough over filling. With a sharp knife, cut three small slits in the top of each turnover., Bake until golden brown, 17-22 minutes. Remove to a wire rack. Combine glaze ingredients; drizzle over turnovers. Serve warm.

- Sprinkle your work surface liberally with flour, and add a bit on the baking pan as well. This will keep the pie crust from sticking.
- Roll out your pie crust, and use a round shape (cookie cutter, cup, bowl) to cut the dough in a circle. Don’t go smaller than about 3 ½ inches, or you won’t be able to fit a tablespoonful of filling inside. A five-inch circle should fit two tablespoons of pie.
- Spoon in your cherry pie filling, then fold your circle over and crimp the edges shut. If you prefer round turnovers, you can use a bit more cherry pie filling and place a second circle on top of your first, crimping shut all around.
- If you’d like to fry your turnovers small sizes are ideal. To fry, lower gently into the skillet of hot oil. Fry at 350 degrees for 1-2 minutes, turning as needed so both sides cook evenly. Drain on a paper towel.
