EASY BLACK BEAN DIP
This is one of the easiest recipies I know of and it can be served and eaten many ways. It can be served with virtually any chip as a dip for a party (or as I more commonly eat it which is whenever I'm hungry for 2 or 3 days till it's gone). It can be used on top of salads or as a condiment for Southwest-style wraps or eaten like a bean salad.

- Mix well and enjoy! This recipe can be eaten immediately after preparation or chilled and served later. Keeps well and lasts for days!
- **Note: You can add salt and pepper to taste if desired however the salt in the canned ingredients is usually all you need). Also, you can substitute parsley for the cilantro if you aren't a big fan of it's flavor.

EASY BLACK BEAN DIP OR SANDWICH SPREAD
Ditch the unhealthy luncheon meats and opt for this spread full of vegetable protein. This version doesn't have any garlic or onion so it works well in an office "brown-bag" lunch. But if you are feeling brave go ahead and add a clove or two of garlic and/or 4-5 green onions.

- Add oil to a skillet over medium heat. Once hot add onion and garlic and cook, tossing frequently so the garlic doesn't burn. After about 5 minutes add in the spices (cumin, chili powder, sea salt and cayenne pepper). Toss to combine and continue cooking another 5 minutes. Add a tablespoon of water if the pan starts to dry out. After about 10 minutes of cooking total, remove from heat.
- Place garlic and onion mixture, black beans, reserved black bean liquid, tomato paste, lime juice, apple cider vinegar and fresh cilantro into a blender. Blend until smooth. Taste and add additional spices, if needed. More salt or perhaps more cayenne pepper if you want the dip to be spicier.
- Transfer the dip to a bowl, garnish with extra cilantro and sour cream, if using. Store in the fridge until ready to serve. Leftover can be stored in the fridge for 2-3 days.
