In order to infuse the rice with the taste of broccoli, I puree the broccoli stalk with water and cook the rice in the green broccoli water. Some freshly squeezed lemon at the end adds freshness to this broccoli and rice recipe.

Steps:
- Combine broccoli stalk and 1 cup water in a blender; blend until pureed. Add remaining cup of water for a total of 2 cups of green water to cook the rice in.
- Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Add rice and cook and stir for 3 minutes. Add chopped broccoli florets, green water, and salt; bring to a boil. Reduce heat to low and simmer until rice is tender, 15 to 20 minutes.
- Fluff cooked rice with a fork and squeeze lemon juice on top before serving.

- Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until broccoli looks like grains of rice. Repeat with remaining broccoli florets.
- Heat olive oil in a large skillet over medium-low heat. Add onion; cook and stir until softened, about 3 minutes. Stir in garlic; cook for 30 seconds. Stir in broccoli rice, salt, and pepper. Reduce heat to low and cook, covered, until broccoli has softened, about 5 minutes. Pour lemon juice on top.

EASY CHEESY BROCCOLI CHICKEN WITH RICE
I adapted this recipe from The Dinner Doctor book. It was really easy to make, so it's perfect for someone who doesn't have a lot of time to put together dinner. I didn't really measure out my hot sauce, I just kindof shook the bottle out over the rice mix, feel free to adjust the amount of hot sauce or substitute with pepper. This recipe would be equally good without the chicken.

- Preheat oven to 375.
- Cut up chicken breasts into bite sized pieces and cook over medium heat in olive oil with salt and pepper until cooked through.
- Place frozen broccoli in a bowl and microwave on high for 2 minutes, just enough so it can be broken up. Pour broccoli and juices into a 13x9 pan, and place in the oven to continue thawing while you complete the next step.
- Place the rice, soup, Cheez Whiz, chicken, milk and hot sauce into a bowl and mix together until combined. The mix will be thick.
- Take the broccoli out of the oven. Using a wooden spoon spread the rice mix over the top of the broccoli evenly. Don't worry if the broccoli is still a little frozen.
- Sprinkle the cheddar and bread crumbs on top and place in the oven for 25-30 minutes. Serve immediately and enjoy!

- Place the rice in a large pot and add 3 cups water. Place a lid on the pot and bring it up to a boil over high heat. Once it reaches a boil, turn the heat down to low and let it simmer for 15 minutes. After simmering for 15 minutes, turn the heat off and let the rice rest without removing the lid for an additional 5 minutes. (OR use your favorite method of cooking rice -- rice cooker, Instant Pot, etc.)
- Once the rice has cooked, fluff it gently with a fork. Add the butter, salt, garlic powder, cayenne, and some freshly cracked pepper. Fold the butter and spices into the rice until fairly well combined (the butter should melt quickly in the hot rice).
- Add the chopped broccoli and gently fold it into the rice. The broccoli should bring the temperature of the rice down just to the point where it is hot/warm, but not so hot that the cheese immediately melts when stirred into the rice.
