EASY YEAST ROLLS
These simple, tender yeast rolls bake to a golden brown and will disappear in no time. If you've never baked with yeast before, these rolls are the perfect starting point. -Wilma Harter, Witten, South Dakota

Steps:
- In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide into four portions. Divide and shape each portion into 12 balls. Roll each ball into an 8-in. rope; tie into a loose knot. Tuck ends under. Place 2 in. apart on greased baking sheets. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., Bake 15-20 minutes or until golden brown. Remove from pans to wire racks.

BUTTERY YEAST ROLLS
These are the absolute best dinner rolls. They are light and fluffy and buttery. The dough can also be shaped in many other ways, so use your imagination. Makes awesome cinnamon rolls too!

Steps:
- Place all ingredients except the 1/4 cup butter into bread machine in the order recommended by the manufacturer.
- Select the dough cycle and start machine.
- Shape dough into 20 to 24 balls and place in buttered pan (s).
- Melt the 1/4 cup butter and brush it over the tops of rolls, saving the excess for brushing on after baking.
- Cover and let rise in a warm place about 1 hour, or until double in bulk.
- Bake at 375 degrees F for 15 to 18 minutes.
- Brush baked rolls with remaining butter.
- NOTE: This dough can also be divided into two portions and each rolled into a 12-inch circle; spread each circle with softened butter, cut into 8 wedges and roll up starting with wide end, to make crescents OR use this dough for cinnamon rolls or sticky buns.
GRANDMA RITA'S SOFT BUTTER ROLLS

Steps:
- Pour milk into a glass 2-cup measuring cup and heat in the microwave until it starts to boil and climb the sides, about 1 minute. Add butter, 1/4 cup sugar, and salt to the scalded milk; set aside to cool until it gets below 110 degrees F (45 degrees C).
- Dissolve yeast and 1 teaspoon sugar in warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
- Pour milk mixture into the yeast mixture; add 2 cups bread flour and egg. Stir the mixture with a wooden spoon until smooth. Add remaining flour, 1/2 cup at a time, mixing thoroughly after each addition, until the dough is smooth and a little tacky.
- Turn dough out onto a sheet of flour-dusted waxed paper and lightly knead to pull dough together; shape into a ball. Place dough in a large, lightly-oiled bowl, and turn to coat. Cover with a towel and let rise in a warm place for about 30 minutes.
- Line a baking sheet with parchment paper. Divide dough into thirds. Break each third into six evenly sized balls and arrange onto prepared baking sheet. Cover balls with a towel to rise further for another 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven until browned, about 15 minutes.

QUICK YEAST ROLLS
This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

Steps:
- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

OUTSTANDING BUTTERY HOMEMADE YEAST ROLLS
This recipe won third place in the Country Woman's contest. Can also divide recipe in half and place in bread machine on dough cycle, then shape by hand. They are so good!

Steps:
- Dissolve yeast in milk.
- Heat Sprite and butter together, then add eggs, sugar, salt, 2 cups of flour and yeast mixture.
- Beat until smooth.
- Stir in enough remaining flour to form smooth dough.
- Turn out onto floured board and knead until elastic.
- Place in greased bowl, turning once to grease top.
- Cover and let rise for one hour.
- Punch dough down and divide into 4 portions.
- Divide these into nine pieces each.
- Shape each into a ball and place on greased baking sheets and let rise for 45 minutes.
- Bake at 350° for 18 to 20 minutes.

- In a large bowl, combine 3 cups flour, yeast and salt. In a small saucepan, heat milk, butter and sugar to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat to combine. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface. Divide into 24 portions; shape into balls. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until almost doubled, about 1 hour. Bake at 375° until golden brown, 15-18 minutes.

- Place flour, kosher salt, and 2 tablespoons plus 2 teaspoons of the granulated sugar in bowl of a stand mixer fitted with a paddle attachment. Dissolve yeast and remaining 1 teaspoon sugar in warm water in a small bowl; let stand 5 minutes. Add yeast mixture, buttermilk, 1 egg, and ¼ cup of the butter to flour mixture. Beat on low speed until dough just comes together, about 2 minutes. Remove paddle attachment from mixer; affix a dough hook attachment. Increase mixer speed to medium; beat dough until smooth and elastic, about 7 minutes. Transfer dough to a large bowl lightly coated with cooking spray. Cover with plastic wrap, and let stand in a warm place (74°F to 80°F) until dough doubles in size, about 1 ½ hours.
- Transfer dough to a lightly floured work surface. Divide dough evenly into 15 (2-ounce) pieces. Roll each piece into an 8-inch-long rope.
- Shape each rope into a spiral, with the tip of rope in spiral center sticking up slightly. Tuck outer tip of spiral under, and pinch to bottom edge of dough to seal
- Arrange rolls 3 inches apart on 2 large baking sheets lined with parchment paper. Lightly coat tops of rolls with cooking spray. Cover loosely with plastic wrap; let stand at room temperature until rolls nearly double in size, 45 minutes to 1 hour.
