EASY CAJUN SEARED SALMON

Great tasting Salmon with a bit of a kick to it.

Easy Cajun Seared Salmon image

Steps:

  • 1. Preheat oven 400 degrees. Season the skinless side of the salmon with the Cajun seasoning and salt.
  • 2. Melt the butter with the olive oil in a large cast iron skillet or non stick skillet. Add the whole garlic cloves. Let the garlic cook about 2 minutes. Add the salmon skin side down and sear until the skin is crispy.
  • 3. Flip the salmon over and add the lemon juice. Place skillet in oven and let bake about 5 minutes depending on how thick your fillets are. Serve garnished with cilantro.

4 salmon fillets
2 Tbsp cajun seasoning
2 tsp salt
2 Tbsp butter
1 Tbsp olive oil
4 clove garlic whole
juice of 1 lemon
cilantro for garnish

  • Broiler: Preheat the broiler with an oven rack about 6 inches away from the heat. Place the salmon on a baking sheet, lined with foil for easier clean up. Broil for 6-8 minutes until is just cooked through and flaky.
  • Grill: Place the salmon skin side down on to a hot grill. Cook for 3-4 minutes until almost cooked through. Flip and cook for 1-3 minutes until cooked to your liking.
  • Pan Seared: Heat a cast iron skillet or heavy bottom pan over medium high heat. Add the fish, skin side down, and cook for about 3-4 minutes until the fish is almost cooked through. Flip and cook for 1-2 minutes until fish is cooked to your liking.

  • Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
  • Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
  • Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.
