Easy Cheesy Funeral Potluck Party Potatoes With Optional Add-Ins image

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9x13 pan.
  • Saute onion in butter til tender, don't brown.
  • Mix all ingredients together in bowl including onions and butter.
  • Pour potato mixture in pan and cover,bake aprox. 1 hour. uncover last 10 minute.

28 -32 ounces hash brown potatoes
10 3/4 cream of chicken soup or 10 3/4 cream of mushroom soup
8 -16 ounces sour cream (I use light)
1/2 cup chopped onion
1/4 teaspoon pepper
1/4 cup butter
8 -10 ounces sharp cheddar cheese (I use 2 percent)
optional ingredients may be added -- broccoli, chicken, ground beef, sausage

I have noticed that whenever several people are given this recipe and asked to bring it to a potluck they are completely separate dishes! This is my favorite recipe for these. Although I highly recommend going the long route and making your own potatoes. The frozen ones just don't taste as good.

Steps:

  • Peel potatoes and boil for 30 minutes, until just tender.
  • Cool and grate into a greased 9x13 inch baking dish.
  • Heat oven to 350º.
  • Combine soup, sour cream, cheese, ½ cup melted butter and onion.
  • Gently blend into the potatoes.
  • Combine corn flakes and 2 tbsp melted butter. Sprinkle on top.
  • Bake for 30 minutes.

12 large potatoes or 1 (32 ounce) bag frozen shredded hash browns
2 (10 3/4 ounce) cans condensed cream of chicken soup
2 cups sour cream
1 cup grated cheddar cheese
1/2 cup butter, melted
1/2 cup chopped onion
2 cups crushed corn flakes
2 tablespoons butter, melted

I have yet to find a recipe for cheesy potatoes to beat my mother's! Definitely the best comfort food and awesome with a side of ham. This recipe has canned green chilies in it which gives it that extra something to top the usual funeral potatoes!

Steps:

  • *Reduced or fat free ingredients it will change the overall flavor and consistency so keep that in mind if reviewing :)*.
  • Boil potatoes with skin on and 1 bay leaf for about 20-25 minutes (make sure you do not over boil your potatoes, they still need to be firm enough to grate). Prep or cook time doesn't include boil time.
  • Peel and grate cooled potatoes into your 9x13 baking dish.
  • In a saucepan heat butter, coc soup, sour cream, 1 c cheese, onions and chilies; stir until ingredients have melted or are well combined.
  • S & P to taste.
  • Add grated potatoes to saucepan and mix until blended.
  • Add 5 oz milk or just enough that mixture isn't too wet.
  • Spoon into the 9x13 baking dish.
  • Top with remaining cheese and bake @ 350 degrees for 20 minutes Optional: If you like a little crunch, add corn flakes or broken potato chips to the top of the cheese.

5 ounces milk, I usually use the empty coc soup can and fill it 1/4-1/2 way
1 1/2 cups cheddar cheese, grated
1/2 cup butter
1/2 cup onion, chopped
2 ounces canned diced green chiles
salt and pepper
1 cup corn flakes or 1 cup potato chips, every once in a while we will add this to the top of the casserole

Steps:

  • Preheat oven to 350°F.
  • Slice the potatoes very thin.
  • Place half of the sliced potatoes in a oiled 2 quart casserole dish.
  • Place half of the sliced onions on the next layer.
  • On top of that sprinkle half of the salt, pepper, and dried parsley.
  • Now place a layer of 1/2 cup of your cheddar cheese.
  • Repeat the last four steps (3-6) making another layer of each.
  • Cover the dish and bake 15 min or until potatoes are tender.

6 medium potatoes
1 medium white onion, sliced
1/4 teaspoon dried parsley
1 cup cheddar cheese, shredded
1/4 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter (1/2 a stick)
