EASY CHEESY GOLDEN POTATO SQUARES
Since my DH and DS could make a meal just on taters, I'm always searching for new and great tater recipes, this one happens to be a really good one. If you like some heat add in some cayenne pepper or chopped jalapeno.

Steps:
- Peel the potatoes and place in cold water to prevent turning dark; set aside.
- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- Melt butter in a large skillet.
- Add in onion and garlic; saute until soft (about 5-6 minutes).
- Add in the evaporated milk and bring to a boil, then remove from heat.
- In a large bowl, combine the eggs, salt and pepper; beat until frothy.
- Shred the potatoes, and add to the egg mixture; toss to combine.
- Add in the milk mixture; stir to combine.
- Set aside about 1 cup of cheese and add the rest to the potato mixture, and mix well.
- Transfer the mixture to prepared baking dish.
- Bake for about 45 minutes.
- Remove from oven and sprinkle the remaining cheese on top and return to oven, bake for an additional 25-30 minutes.
- Cut into squares and serve hot.

- Cut potatoes in half and place in a pot. Cover with water and bring to a boil. Work on other dishes while you are waiting for the water to boil.
- When water boils, add the potatoes and some salt, 2 big pinches, and boil for 10 minutes or until tender. Drain and return potatoes to the hot pot. Smash potatoes with masher and combine with sour cream and cheese. When cheese melts into potatoes, add chives and salt and pepper and re-smash. Taste the potatoes and adjust seasonings.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir cream of chicken soup, cream cheese, and milk together in a saucepan over medium heat and cook until the cheese is completely melted and the liquid is heated through, about 5 minutes.
- Spread hash brown potatoes into a casserole dish; pour soup mixture over the potatoes.
- Bake in preheated oven until the edges begin to brown, about 1 hour and 15 minutes.
- Sprinkle Cheddar cheese over the dish; let the cheese melt as the dish cools slightly before serving, about 10 minutes.

This can be either a side dish or an appetizer. This was originally from a diabetic cook book. We cut the pan into 9 as a side dish but you can easily make them smaller for appetizers.

- Mix mashed potatoes, flour, salt and pepper. Spoon into a greased 9 X 9 baking dish.

- Scrub unpeeled potatoes and bake at 400° for 40 minutes or until slightly firm. Cool overnight or few hours in fridge. Peel and grate potatoes., In a large pan, heat butter and 2 cups cheese over low heat, stirring constantly, until cheese is barely melted. Remove from heat. Stir in sour cream, green onions, chilies, bacon, salt and pepper., Fold mixture into potatoes. Pour into lightly greased 2 1/2-qt. casserole; sprinkle with remaining cheese and paprika. I found this recipe in a Cooking Clips recipe folder that I've had for a looong time! No idea where it is originally from but it's another great way to make potatoes!

Steps:
- Preheat oven to 425 degrees.
- Pour 3 T. oil into an 8 inch square pan and heat in preheated oven while preparing potatoes.
- Drain potatoes and onions thoroughly and pat dry with paper towels, if necessary.
- Mix potatoes and onion with egg yolks, flour, salt and pepper.
- Beat egg whites until stiff but still moist peaks form; gently fold into potato mixture.
- Remove pan from oven and spoon in potatoes; smooth top and drizzle with remaining tablespoon of oil on top.
- Bake in oven for 45 to 60 minutes or until tender and crusty.
- Serve hot.

Steps:
- Peel 4 medium large potatoes and grate directly into 1 cup of milk in a well buttered 8 inch square baking pan.
- Grate a small onion into the milk and add 3 Tbsp chopped green pepper, grated cheddar cheese, salt and pepper to taste. Beat 3 eggs well and combine. Dot with 2 tsp of butter.
- Bake at 350 F for about 50 minutes to 1 hour or until the pudding is richly browned.
- Cut into squares to serve.

- Put half of bread cubes in an 8 x 12" greased pan.
- Combine chicken, onion, mushroom soup, mayo and seasonings.
- Spoon over bread cubes.
- Top with remaining cubes of bread.
- Beat eggs slightly and blend with milk.
- Pour over bread.
- At this point, cover and refrigerate overnight if you choose to do so. If not, continue with below instructions without refrigerating (I have made both ways and notice no difference.).
- Before baking, top with undiluted cream of chicken soup.
- Bake at 325 for 1 hour.
- Sprinkle cheese over top and bake 5 minutes more.
- Let stand 10 minutes before serving.

CHEAP EASY CHEESY POTATO BAKE
A little like the cheesy Swiss bake, but for those on a budget! Great comfort food as well. This dish can be enjoyed as a full meal for two or a side dish for 4. Enjoy!

- Preheat the oven to 200c/fan 180c, Chop the potatoes into small squares and boil for about 10 mins. Drain and then leave.
- While the potatoes are boiling chop the bacon, onion, mushrooms and Garlic. Start to fry the onions and when they have gone a little soft add the rest.
- Once everything is cooked in the frying pan, add the soft cheese and stir until everything is coated. Pour the mixture into the potatoes and stir so it covers everything.
- Pour into an oven proof dish and sprinkle some paprika and a third of the cheese, then stir again. Once everything is coated cover with foil and bake for 25 mins.
- After the 25 mins remove the foil and put the rest of the cheese on top of the bake and put back in the oven for about 20 mins until the cheese has gone a nice golden brown.
