CUSTARD PIE
Adopted Recipe. When I tried the recipe I used the suggestions in the reviews, and increased the nutmeg from the original 1/8 teaspoon to 1/4 teaspoon, and also added 1/4 teaspoon cinnamon, which was not called for in the original recipe. Use more if desired.

Steps:
- Beat eggs well in a large bowl, then add milk, salt, sugar, nutmeg, cinnamon and vanilla.
- Cover a baking sheet with foil and place it on center shelf of preheated 450 degree (Fahrenheit) oven.
- Place 9 inch pie plate containing the uncooked pie shell on baking sheet and pour mixture into pie shell.
- Bake at 450 degrees for 10 minutes.
- Reduce oven temperature to 350 degrees and bake for 30-35 minutes more or until knife inserted comes out clean.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°. Separate 1 egg; set the white aside in a large bowl and let stand for 15 minutes. In a small bowl, beat the yolk and remaining eggs just until combined. Blend in the sugar, salt and vanilla. Stir in milk. Beat reserved egg white until stiff peaks form; fold into egg mixture. , Carefully pour into crust. Cover edge of pie with foil. Bake for 25 minutes. Remove foil; bake until a knife inserted in the center comes out clean, 15-20 minutes longer. Cool on a wire rack. Sprinkle with nutmeg. Store in the refrigerator.

BERRY CUSTARD PIE

- Preheat the oven to 350 degrees F.
- In a medium bowl beat together the egg, sugar and salt until the mixture becomes pale. Slowly beat in the milk and vanilla.

RICH AND VELVETY CUSTARD PIE - 2003 1ST PLACE CUSTARD

- Crust:
- Mix all the dry ingredients together and cut in the shortening to resemble course crumbs. Beat the remaining ingredients, except the egg white, together and add to flour. Stir only to incorporate. Wrap in plastic and chill for several hours. Roll out and line pie dish. Bake crust (halfway) in a preheated 350 degree oven for 20 minutes. Brush with an egg white and bake an additional 5 minutes.
- Filling:
- Preheat the oven to 400 degrees F.
- Scald the milk and half-and-half.
- Mix together the eggs, sugar, salt and vanilla. Add the hot milk. Very carefully pour through a fine strainer and into the pie shell. Grate nutmeg over the top of the filling.
- Bake for 10 minutes on the bottom rack and then move to the middle rack and reduce the heat to 325 degrees F. Bake for approximately 25 minutes, or until knife inserted in the middle comes out clean or until the middle of the pie is almost set. It will continue to cook after it is taken out of the oven. Cool on a rack.

My grandmother passed down this recipe to my mother, who in turn passed it down to me. Now my daughter is making it for her family. With a graham cracker crust, custard filling and meringue topping, this pie was one of my favorites when I was growing up and it still is today.

- Preheat oven to 350°. Combine the graham cracker crumbs, brown sugar and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake until lightly browned, 8-10 minutes. Growing up we had this pie every year at Thanksgiving and Christmas. It's simple but decadent. If you've never had Custard Pie before, it's a little bit like Creme Brulee in a pie crust. This is wonderful served chilled with REAL whipped cream. Enjoy.

GRANDMA RAMPKE'S EASY RHUBARB CUSTARD PIE
This was my dad's favorite pie, and my mom got the recipe from his mother. It's been replicated all over the internet in the past few years. I think the first incidence can be documented to 1995.

- Place 1/2 pie crust into pie plate.
- Put the rhubarb in the crust and cover with 1/2 cup sugar.
- Add the other 1/2 cup sugar to the milk and beaten eggs, and pour mixture over rhubarb.
- Sprinkle top with cinnamon.
- Bake at 350 degrees for 45 minutes; let cool before serving to allow custard to set.

RICH PASTRY FOR CUSTARD PIES

- Combine flour and salt in the bowl of a food processor.
- Cut the butter into chunks and distribute them over the flour. Mix with a spoon so each is coated. Process in six or seven short bursts until the butter pieces are a bit larger than peas.
- Beat yolk and ice water to combine thoroughly. Turn processor on and pour liquid through feed tube. Turn the processor off when the dough begins to clump up.
- Gather dough from blades, form into a ball, wrap tightly in plastic wrap and chill at least four hours before using.

SENSATIONALLY SMOOTH AND SIMPLE VANILLA CUSTARD PIE
At first glance it may seem as if there are a lot of steps for this vanilla custard pie but really it is very simple with "staple" ingredients. The steps are for clarification. Basically it's just heating milk and whisking it into egg mixture very slowly, then bake for about an hour... It is my most requested pie. Serve with a dollop of fresh whipped cream or some rhubarb syrup (yum!).

- Preheat the oven to 400 degrees F (200 degrees C). Line a double-layered cookie sheet (to protect from overbrowning the bottom) with foil.
- Heat milk in a small saucepan over medium heat until it begins to steam. Do not scorch or boil.
- Whisk 1 egg white in a bowl. Lightly brush on the inside and top of the frozen pie crust. Place crust on the prepared cookie sheet. Set aside while making custard filling.
- Whisk remaining eggs and yolk, sugar, vanilla extract, salt, 1/8 teaspoon nutmeg, and lemon zest together in a bowl until well mixed. Dribble in the steamed milk very slowly, whisking the whole time, about 2 minutes; it will be very frothy.
- Pour the frothy custard mixture into the prepared pie crust. Sprinkle top with 1/4 teaspoon nutmeg. Transfer to the oven very carefully.
- Bake in the preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake until a knife inserted near center comes out moist but mostly clean, about 45 minutes more; start checking 8 to 10 minutes before the hour is up due to variations with ovens.
- Cool on a wire rack to room temperature, about 30 minutes before transferring to a refrigerator to set.
