Celiacs will love this gluten-free version of fudge brownies. It's made of basic ingredients, and the flour mix is widely available in grocery stores.

Steps:
- Preheat oven to 350 degrees F (175 degrees C), and grease an 8x8 inch square baking dish.
- Stir together the gluten-free baking mix, cornstarch, white sugar, brown sugar, cocoa powder, and baking soda in a bowl, sifting with a fork to remove lumps. Pour in the eggs and melted margarine, and mix with a large spoon or electric mixer on low until the mixture forms a smooth batter, 3 to 5 minutes. Scrape the batter into the prepared baking dish.
- Place a sheet of aluminum foil on the oven rack to prevent spills as the brownies rise, then fall during baking. Bake until a toothpick inserted in the center of the brownies comes out clean, 40 to 45 minutes.

Steps:
- Preheat oven to 350.
- OIl 8 x 12 inch pan.
- Beat together eggs and sugar until smooth.
- Mix in oil and melted chocolate chips until well blended.
- Then add salt, potato starch and ground almonds and stir until just blended.
- Pour into pan and bake 35 - 40 minute Center should be firm, but still moist.

I was in the mood for some brownies, and I like simplified recipes, so this is one I adapted, and it's the closest thing to "real" brownies I've come across.

- Add wet ingredients and stir until well blended.

Steps:
- Heat oven to 180C/160C fan/gas 4. Butter a 30 x 20cm non-stick tin with butter and line the base with non-stick baking parchment.
- Fill a small saucepan a third full with water, bring to a simmer and put a snug-fitting heatproof bowl on top of it. Add the butter and chocolate and gently melt over a low heat, stirring occasionally. Be careful not to let it catch and burn on the bottom. Remove from the heat and leave to cool a little.
- Beat the eggs and sugar together using an electric whisk for 8-10 mins or until thick enough to leave a trail. Gently fold through the cooled melted chocolate and vanilla, followed by the flour, cocoa and salt. Finally, fold through the chocolate chunks. Pour the brownie batter into the lined tin, place in the centre of the oven and bake for 30-35 mins.
- Leave to cool a little in the tin before cutting into 12 squares.

- Heat oven to 350°F/180°C. Line an 8×8-inch baking pan with parchment paper or aluminium foil, leaving enough overhang on the sides for lifting the brownies out after baking.
- In a large heat-proof bowl, place chocolate and butter. Heat in the microwave in 20-second intervals, stirring in between each interval, until melted (or set it over a saucepan of simmering water, stirring occasionally). Add sugar and mix until combined. Add eggs, one at a time, and whisk until combined. Add nuts, cornstarch, and salt and fold, using a rubber spatula, just until combined. Do not overmix.
- Pour batter into prepared pan. Bake for 20-25 minutes, until the edges are set but the center is still very soft. Be careful not to overbake. A toothpick inserted into the center of the brownies should come out with moist crumbs, not dry. Transfer pan to a wire rack, and let it cool completely. Refrigerate until completely set for easy cutting, at least 4 hours. Lift brownies out of the pan using the parchment paper and cut into 16 squares.
