Instant Pot® Baby Back Ribs image

Steps:

  • Combine kosher salt, brown sugar, chili powder, paprika, garlic powder, cayenne pepper, and black pepper in a small bowl for the spice rub.
  • Cut the rack of ribs into 4 equal portions. Rub all sides of each piece with spice rub.
  • Pour broth into a multi-functional pressure cooker (such as Instant Pot®). Add ribs in a teepee formation. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Move ribs to the baking sheet using tongs. Brush ribs on all sides with barbeque sauce.
  • Bake in the preheated oven for 7 minutes. Turn ribs and continue baking until meat pulls away easily from the bone, about 7 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Fall-Off-the-Bone 30-Minute Instant Pot® Ribs image

Steps:

  • Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.
  • Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place ribs on the foil. Top with barbeque sauce.
  • Broil ribs until sauce is bubbling, about 3 minutes.

Tender, sweet, and sticky baby back ribs that only take 1 hour from prep to plate. If you like them with a little spice, add a teaspoon of cayenne pepper to the dry rub. I make this in my 8-quart Instant Pot® Duo; a 6-quart pot may require less liquid.

Instant Pot® Sweet Baby Back Ribs image

Steps:

  • Use a butter knife to cut into an edge of the rib racks. Use a paper towel to grab and lift off the silvery membranes.
  • Combine brown sugar, garlic salt, chili powder, black pepper, and cayenne pepper in bowl. Coat the ribs generously with the dry rub.
  • Place the trivet inside the Instant Pot®. Pour in broth, root beer, vinegar, and liquid smoke. Place ribs on the trivet on their sides, with one inside the other. Close and lock the lid and make sure the vent is sealed. Select manual high pressure and set the timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 15 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler on the highest heat setting. Place a rack 6 inches from the heat source.
  • Transfer ribs to a broiling pan and generously coat with barbecue sauce.
  • Cook in the broiler until barbeque sauce is bubbly and caramelized, 5 to 7 minutes.

  • Prepare & Season Baby Back Ribs: Remove the membrane from the back of the ribs with a paper towel. Season the ribs with a generous amount of kosher salt and ground black pepper.
  • Pressure Cook Baby Back Ribs: Add 2 – 3 drops of liquid smoke in Instant Pot (optional). Add in 1 cup (250ml) of cold water (or apple cider vinegar) and a trivet. Place the baby back ribs on top of the trivet. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 16 minutes to 25 minutes, then Full Natural Release. *Cooking Time Tip: Adjust the cooking timing according to the thickness of your ribs & preferences: 16 minutes (tender with a bit of chew) to 25 minutes (fall-off-the-bone tender).   • Remove the membrane from the bottom side of the ribs. Starting on one side, gently slide a knife under the membrane and pull it off just a little bit. Once you have enough membrane to hold on to you should just be able to pull it all off in one pull. Just make sure you are pulling from one side all the way to the other to ensure you’re removing the entire thing.
  • To prepare the spice rub, to a small bowl add garlic powder, paprika, chili powder, cinnamon, salt and pepper. Rub all over the both sides of the ribs.
  • Next, add water, apple cider vinegar and liquid smoke to the bottom of the Instant Pot. Place the wire rack in your instant pot and curl the the ribs inside the pot. Standing them on their side, wrapping around the inside of the pot with the “meat side” facing out. Top with cubed onion and garlic.
  • Secure the lid for the Instant, making sure the vent is closed. Press the Pressure Cooker mode and set to 25 minutes. When the cooking time ends, let the pressure naturally release for 10 minutes. Then quick release for the rest.

  • Rinse the ribs and pat them dry. If your ribs still have the thin, shiny membrane on the back, remove it. (This is easy, don’t worry!) Flip the ribs over, meat-side down. Wiggle a dull knife (such as a butter knife) between the membrane and the ribs to loosen it. With a paper towel, grip the membrane and pull it away, then discard.
  • In a small bowl, stir together the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne. Rub it all over the ribs, generously coating all of the sides.
  • Place the trivet (or rack) in the bottom of a 6-quart or larger Instant Pot. Pour in the water, apple cider vinegar, and liquid smoke. Place the ribs inside the pot, standing them on the trivet on their side and wrapping the rack around the inside of the pot like a circle.
  • Cover and seal the Instant Pot. For baby back ribs: Cook on high (manual) pressure for 23 minutes (if you are making multiple racks and your ribs are super meaty, increase to 25 minutes). Allow the pressure to release naturally for 5 minutes, then vent to release the remaining pressure. For spare ribs: Cook on high for 35 minutes. Allow the pressure to naturally release completely (about 15 minutes). You will know it is released when the pin drops.
