A delicious baked strawberry dessert that makes excellent use of fresh strawberries! The aroma coming from the oven is maddening! I highly recommend serving this warm with vanilla icecream.

Steps:
- Preheat oven to 375°.
- In a large bowl, combine white sugar, 2 tablespoons flour, and strawberries.
- Place strawberry mixture in a buttered 9x13 baking dish.
- Combine the rest of the ingredients until crumbly. Scatter over strawberry mixture. Bake for 45 minutes. Serve warm with vanilla icecream or whipped cream.

PEACH AND STRAWBERRY CRUMBLE

- Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter an 8 by 8-inch glass baking dish. Set aside.
- For the filling: In a medium bowl, whisk together the lemon juice and arrowroot until smooth. Add the strawberries, peaches and brown sugar. Gently toss until the fruit is coated. Pour the fruit mixture into the prepared pan.
- For the topping: In the bowl of a food processor, combine the flour, oats, almonds, brown sugar, cinnamon, and sea salt. Pulse until mixed. Add the butter. Pulse until the butter is the size of peas. Sprinkle the mixture over the filling and bake for 40 to 45 minutes until the filling is bubbling and the top is light golden. Cool the crumble for 5 minutes.
- Spoon the warm crumble into bowls and serve with a dollop of whipped cream or ice cream.

- In a bowl mix together chopped strawberries with 1/2 cup white sugar and 1 Tbsp cornstarch. Stir until sugar is dissolved and strawberries look glossy.
- Transfer to a baking dish.
- In another bowl combine 1/2 cup all-purpose flour, 1/2 cup oats, 1/2 cup brown sugar and 1/3 cup melted butter. Stir until the mixture is crumbly and fluffy.
- Sprinkle all over the strawberries and bake 30-35 min or until strawberries become bubbly in the oven preheated to 375°F Serve with a scoop or two of vanilla ice cream.

- Make the topping: Position a rack in the middle of the oven and preheat to 375 degrees F. In a mixing bowl, combine the flour, baking powder, both sugars and the lemon zest. Add the melted butter and stir until the mixture forms small and large clumps. Refrigerate 10 minutes.
- Make the filling: Toss the rhubarb, strawberries, lemon juice, granulated sugar, cornstarch and salt in a 9-inch square baking dish or 9-inch deep-dish pie plate. Let sit 10 minutes.
- Cover the fruit thickly and evenly with the topping. Place the dish on a foil-lined baking sheet. - Preheat a convection oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Pour sliced strawberries for filling into a bowl. Add sugar, cornstarch, and cinnamon; mix to combine.

- For the crust: Preheat the oven to 350°F. Line an 8×8-inch square pan with foil or parchment paper.
- Combine all crust ingredients in a bowl to form a soft dough.
- Press dough into the bottom of the prepared pan. Bake for about 15 minutes or until the edges begin to turn lightly golden brown. Then, allow to cool for 5-10 minutes before continuing.
- For the cheesecake layer:: Cream together cream cheese and sugar until smooth and fluffy.

- To assemble: Pour cheesecake filling over baked crust, spreading to the edges and corners.
- Then, evenly dollop cooled strawberry filling over cheesecake filling. Do not mix.
- Finally, crumble the brown sugar crumble topping evenly over the top of the strawberry layer.
- Bake for 25-30 minutes or until the cheesecake layer is set and crumble topping is lightly browned.
- Cool before serving. Enjoy!
