CRISPY BAKED TURKEY BURGERS
Ground turkey patties are breaded and baked in the oven. Serve on a bun with zesty sauce and shredded cabbage to make it a meal.

- Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
- Combine turkey, 1 egg, 1/4 cup bread crumbs, scallions, parsley, garlic powder, salt, and black pepper in a bowl. Form mixture into 6 patties using a 1/3-cup measuring cup.
- Beat remaining egg and hot sauce together in a bowl. Pour remaining bread crumbs into a bowl. Pour flour into a separate bowl.
- Coat patties with flour, egg mixture, and bread crumbs, in that order, and place on the prepared baking sheet. Lightly spray patties with cooking spray.
- Bake in the preheated oven until crisp, 18 to 20 minutes.

Too cold out to grill? No grill? No problem. These are tasty turkey burgers pan-fried on the stovetop. The secret is to only flip them once. And don't go for the super lean turkey. - Grate shallot with a medium plane of a grater into a large bowl. Be sure to collect the juice. Add turkey, mayonnaise, steak sauce, and parsley. Mix gently with your hands until fully incorporated. Divide into 4 equal portions and gently form into patties. Season tops with garlic salt and pepper.
- Spray a large skillet with cooking spray and place over medium-high heat. When the pan is hot, place in burgers, seasoned-sides down. Season the opposite sides with more garlic salt and pepper. Cook until browned, 4 to 5 minutes. Flip; continue to cook until no longer pink, 4 to 5 minutes more.

TURKEY BURGERS WITH BUTTERNUT SQUASH FRIES
The real stars of this dish are the baked French fries made from butternut squash instead of potatoes. You can make fries from any root or winter vegetable. Just peel and slice into matchsticks.

- Preheat the oven to 450˚ F. Trim, peel and halve the butternut squash. Scoop out and discard the seeds. Cut the squash into 1/4-inch-thick matchsticks. Coat a rimmed baking sheet with cooking spray. Arrange the squash in an even layer on the baking sheet and coat with cooking spray. Bake until the squash fries are golden and crisp, about 25 minutes. Sprinkle with salt.
- Meanwhile, combine the turkey, spinach, scallions, garlic and 1 teaspoon each salt and pepper in a large bowl; mix well. Form into four 4-inch-wide patties. Heat a large skillet over medium-high heat and lightly coat with cooking spray. Add the patties to the skillet and cook until browned and cooked through, about 4 minutes per side, topping each with a slice of Swiss cheese during the last minute of cooking.
- Spread the mustard and jam on both halves of the buns. Serve the burgers on the buns and top with lettuce. Serve with the squash fries.

This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

- Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.
- Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
- Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). Transfer to a baking sheet and cook in the oven for 10-15 mins. Serve in rolls with Tangy tomato chutney (see 'goes well with') and cucumber slices.
- For the chutney heat 1 tbsp of olive oil in a pan and add 1 finely chopped onion. Cook for 5 mins until softened. Stir in 1 crushed garlic clove and cook for a further min. Add 1 tbsp sundried tomato paste, a 400g can good-quality chopped tomatoes and a pinch of sugar. Gently cook for 20-25 mins until rich and thick. Season to taste, then leave to cool before serving.

- Place the ground turkey in a medium-size bowl. Add the salt, pepper, Worcestershire sauce, ricotta cheese, bread crumbs, and mustard. Using your hands, mix until well blended. Divide the meat mixture into 4 equal portions. Lightly toss one portion from hand to hand to form a ball, then lightly flatten the ball with your fingertips into a 3/4-inch-thick patty with a slight depression in the center (this prevents the burgers from puffing up when cooked). Repeat with the remaining portions.
- Heat a large, heavy, ovenproof skillet over medium heat until very hot, 4 to 5 minutes. Add the oil to the pan and swirl to coat the bottom. Add the burgers and cook over medium heat, without moving the burgers, until the bottom side of each is dark golden brown and crusted, 3 to 4 minutes. Turn the burgers over; continue to cook until the bottom side is light brown but not yet crusted, about 3 minutes longer. Transfer the pan to the oven and continue cooking for 7 to 8 minutes, or until the burgers are completely cooked (an instant-read thermometer inserted from the side of the burger into the center should register 160°F). Remove the burgers from the pan and serve immediately.
- Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.
