TURKEY SPAGHETTI
Leftover turkey gets transformed into a bubbling, cheesy pasta casserole with just enough kick from pickled jalapenos.

Steps:
- Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Butter a 9-by-13-inch baking dish.
- Cook the spaghetti according to the package instructions. Drain and then rinse. Shake off any excess water and transfer to the prepared baking dish.
- Melt the butter in a large saucepan over medium heat. Add the cumin, scallion whites and garlic and cook, stirring, until soft, about 4 minutes. Sprinkle in the flour and cook, stirring, until completely absorbed, about 1 minute. Add the milk, 1 teaspoon salt and a few grinds of pepper and cook, stirring, until the sauce is heated through, steaming and thickened slightly, about 5 minutes. Remove from the heat and add small handfuls of half of each cheese, stirring to melt after each addition.
- Stir in the turkey, pickled jalapenos, brine and tomatoes. Adjust the seasoning with salt and pepper.
- Pour the sauce over the cooked spaghetti, using a wooden spoon or rubber spatula to evenly distribute the turkey into the pasta. Sprinkle the top with the remaining cheeses. Bake, uncovered, until melted and bubbly, 25 to 30 minutes. Sprinkle with the scallion greens.

- For the meatballs: Preheat vegetable oil over medium heat.
- In a medium bowl, soak the torn white bread with the milk. Let soak for 1minute then remove the bread and squeeze out the excess milk.
- In another bowl, add ground turkey, turkey sausage, Parmesan, parsley, garlic and salt and pepper. Add milk soaked bread and mix all ingredients gently. Form meat mixture into 1 1/2-inch meatballs.
- In a large heavy skillet, add meatballs and cook until golden brown on all sides. Remove the meatballs to a paper towel lined platter. Repeat in batches until there are no remaining meatballs. Add meatballs to the cooked sauce and add salt and pepper, to taste. Cook for 10 minutes.
- For the sauce: Heat olive oil in a large heavy bottomed saucepan. Add garlic and red pepper flakes and cook until fragrant. Add crushed tomatoes and let simmer for 15 minutes. Add dried basil, sugar, salt and pepper.
- Toss spaghetti and sauce with meatballs in a large serving bowl. Top with grated Parmesan cheese.
SPAGHETTI AND TURKEY MEATBALLS

- Heat the olive oil in a large saucepan over medium heat. Add the smashed garlic and cook 1 minute. Add the tomatoes with their juice, 2 cups water, 1/4cup basil, the parmesan rind, if using, and salt and pepper to taste. Bring to a boil, then reduce the heat and simmer until thickened, about 8 minutes. Discard the parmesan rind, if used.
- Chop the remaining 1/4cup basil, then mix with the turkey, parsley, bread, ricotta, parmesan, egg white, minced garlic, 1/2 teaspoon salt, and pepper to taste in a bowl using your hands. Form into 4 large or 12 small meatballs; add to the sauce and simmer, turning, until cooked through, 6 minutes for small meatballs and 12 minutes for large.
- Meanwhile, cook the spaghetti in a large pot of salted boiling water as the label directs. Drain and return to the pot. Toss with some of the sauce, then divide among bowls. Top the spaghetti with the meatballs, the remaining sauce and more parsley and parmesan.

- Make the sauce: In a large nonstick skillet, heat oil over medium-high heat. Add garlic, and cook about 1 minute. Stir in tomatoes, oregano, and thyme, and season with salt and pepper. Bring to a boil, lower heat, and simmer, covered, 20 to 25 minutes.
- Make the meatballs: In a large bowl, whisk together egg, milk, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper with a fork. Stir in onion, breadcrumbs, cheese, and parsley. Add turkey, and mix until combined. Form mixture into 1 1/2-inch balls.
- Add meatballs to skillet, and spoon sauce over to coat. Place over medium heat until meatballs are just cooked through, about 8 minutes.
- Cook spaghetti until al dente according to package instructions, about 12 minutes. Drain pasta, transfer to skillet, and toss gently with the sauce. Serve with more cheese.
TURKEY SPAGHETTI
Steps:
- Bring a large pot of salted water to a boil.
- Heat a large pan over medium heat and add the olive oil, garlic and onion. Cook until translucent, about 2 minutes. Add the turkey and cook, breaking it up with a spoon, until cooked through, about 8 minutes.
- Add the crushed tomatoes, tomato sauce and tomato paste, stirring to combine. Add the sugar, dried basil, oregano, parsley, cinnamon and 1/2 teaspoon each salt and pepper and stir to combine. Add the bay leaves and 1/2 cup water. Stir well and simmer to infuse the flavors, about 10 minutes.
- Meanwhile cook the spaghetti in the boiling water according to the package instructions. Drain well.
- Transfer the spaghetti to a platter and ladle the sauce on top. Top with the grated Parmesan and fresh basil leaves.

- Preheat oven to 350°F (180°C).
- Heat the olive oil over medium heat in a large skillet.
- Add the turkey and cook until browned, about 5-6 minutes.
- Add the onion, bell pepper, salt, and pepper. Cook for 5-6 minutes.
- Add the tomatoes, garlic, thyme, basil, and oregano. Cook for 2-3 minutes.
- Add the spaghetti squash. Cook for 4-5 minutes until most of the liquid has cooked off.
- Add half of the mozzarella and stir until cheese has melted, about 1-2 minutes.
- Remove from heat and ladle the mixture into a baking dish.

SOMMER'S SPAGHETTI WITH GROUND TURKEY
This has become my favorite way to prepare spaghetti, even more than the basic spagetti with ground turkey I posted here awhile back. This usually serves my bf and me for one night and me for two lunches, or another night for the two of us if I don't use leftovers for lunch. My favorite brand of sauce to use is Prego and my two fave flavors are Prego Chunky Garden Mushroom Supreme or Prego Roasted Garlic and Herbs. I buy the standard 26oz jar. I had to estimate the amount of spaghetti noodles, as I have no way of measuring this. This is very friendly to my moderate to severe IBS. Also, my bf can add his parmesan cheese to his own serving. Wonderful with salad and garlic bread. The ratios in this recipe make for a hearty sauce.

- In a large pan, add ground turkey, worcestershire sauce (if using), chopped green pepper, and chopped onion. Cook on med-high heat, breaking up and crumbling turkey, until browned, but pepper and onion are still crisp. If using lean or extra-lean turkey, you may want to use non-stick spray before adding turkey. Drain, if using full-fat ground turkey.
- Return meat mixture to pan, turn heat down to medium and add the entire 26 oz. jar of spaghetti sauce. Stir to combine. Heat to boiling, stirring occasionally, then reduce heat to low to keep warm while finishing cooking spaghetti noodles.
- While ground turkey mixture is cooking, fill a large pot full of water. Add in a bit of olive oil, if using. Heat on high to boiling. If using salt, add a small amount of salt to boiling water.
- Break spaghetti noodles in half, if desired. Add to boiling water, turn down to medium-high but make sure water continues to boil. Cook spaghetti to desired doneness or per package directions. Drain.
- Serve hot spaghetti noodles with sauce.

- Cook Spaghetti noodles until done and set aside.
- Preheat oven to 350 degrees and grease a 9x13 casserole dish.
- Cook the turkey breast, green peppers and onions in a skillet on medium heat until turkey is no longer pink.
- Add the drained jar of mushrooms and the can of diced tomatoes to skillet. Simmer for 15 minutes.
- In a small bowl mix the can of cream of mushroom soup with the water.
