The trick is to underbake them a little bit, and the result is the soft cakey cookie you know and love!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
- In a large bowl, stir together the brown sugar, oats, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and pour in the canola oil, prune puree, water, egg whites and vanilla. Mix until well blended. Stir in the raisins, walnuts and apricots. Scoop cookies using an ice cream scoop, or roll into golf ball sized balls. Place cookies 2 inches apart onto the prepared cookie sheets and flatten to 1/2 tall with wet hands. These cookies do not flatten very much while baking.
- In the preheated oven, bake 8 minutes for chewy cookies 10 to 12 minutes for dry cookies. Cookies will not get crisp. Remove from cookie sheets to cool on wire racks.

- Place rack in center of oven and preheat oven to 350 degrees F.
- Whisk together flours, baking soda, cinnamon, nutmeg and salt in a medium-sized bowl. Combine butter, oil and sugars in the bowl of a stand mixer and mix on high speed, scraping down sides if necessary, until sugars have dissolved and mixture is light in color, about 1 minute. Add egg, carrot puree and vanilla and beat an additional 30 seconds. Add flour mixture and beat an additional 30 seconds. Add oats, flakes, raisins and walnuts and mix over low speed just until incorporated. Dough will be slightly sticky and less cohesive than traditional cookie dough. Line a large cookie sheet with parchment paper. Using between 3 to 4 tablespoons of batter, form a ball and place on cookie sheet. Repeat with remaining batter, leaving about 3 inches between cookies. Wet hands and use palm of hand to flatten cookies until about 1/4-inch thick. Bake for 12 minutes, until cookies are fragrant but still soft. Let cookies cool slightly, then transfer to a wire rack to cool completely.

- Preheat the oven to 350 degrees. Lightly spray two baking sheets with cooking spray, or line them with parchment paper; set aside.
- Mix all of the ingredients together in a large bowl until very well combined. Let this mixture stand for about 5-10 minutes to let the oats absorb some of the moisture from the wet ingredients. Using a heaping spoonful of batter for each cookie, drop batter onto the prepared cookie sheets, leaving room for each cookie to "spread" slightly. Flatten with the bottom of a cup, as cookies do not spread like regular cookies. Bake for 15-20 minutes before removing to a wire rack to cool.
- (1/2 cup raisins are optional).

HEALTHY BREAKFAST COOKIES
This is an easy, and incredibly nutritious recipe that you can quickly throw together the night before to have for breakfast the following morning. My brother loves them and was my inspiration when I perfected this yummy cookie recipe. If there's a lot of old or stale cereal left in your pantry, this is an easy way to use it up! Again, I use a lot of applesauce in place of butter or oil. Enjoy!

- Add vanilla and eggs; beat well.
- Combine flour, baking soda/powder, cinnamon, and nutmeg.

- Crush cereal well, then mix that into the rest of the dough. I usually put my cereal in one of those heavy duty gallon sized ziplock bags and stomp all over it!

- Preheat oven to 400.
- In a bowl, combine oats and yogurt and set aside.
- In a large bowl beat eggs, sugar, honey and applesauce.
- Add flours, wheat bran, baking powder and baking soda. Mix until combined.
- Add oatmeal and yogurt mixture and beat gently.
- Fold in carrots, raisins and pineapple.
- On a parchment paper lined cookie sheet, scoop 1/4 cup of batter and flatten.
- Bake at 400 for 25-30 mins until lightly browned.
- Cool on wire rack.
