Steps:
- Sprinkle chicken with salt and lemon-pepper.
- Heat oil in a large skillet over medium heat; cook the chicken breasts in hot oil until no longer pink in the center and the juices run clear, 13 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove and keep warm.
- Place bacon in large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve 2 tablespoons drippings. Cook and stir onion and brown sugar in reserved drippings until onion is golden, about 5 minutes.
- Place two bacon strips on each chicken breast half; top with caramelized onions and sprinkle with Colby-Monterey Jack cheese.

EASY OVEN-FRIED CHICKEN BREASTS
I'm too lazy to fry chicken the traditional way. I've experimented with chili powder, Greek seasoning etc. in place of the paprika or poultry seasoning. Try what you like.

- Heat oven to 425 degrees.
- Melt Crisco in a 13" x 9" baking pan.
- Combine flour, paprika, salt and pepper in a bag.
- Shake chicken pieces, one at a time, in bag to coat with flour mixture.
- Place chicken skin side down in baking pan.
- Bake, uncovered, 30 minutes.
- Turn chicken.
- Bake 30 minutes longer.
EASY CHICKEN BREAST
This recipe has about a 5 minute prep time, and it tastes great. Chicken breasts in a creamy sauce with some white wine! It also freezes well. Serve over rice with hot bread.

Steps:
- Preheat over to 350.
- Rinse chicken and pat dry.
- Crush corn flakes and french fried onions into very small pieces. Do not roll, you will want the mixture to be slighty chunky. Thourghly mix together the corn flakes and onions.
- Brush each chicken breast on the top and sides with the sandwich spread.
- Place chicken on a plate and cover with the crumb mixture, pressing down hard to stick. I do not coat the bottom - it becomes mushy.
- Place on baking sheet and cook 25 minutes.
- Remove chicken and drizzle with melted butter.
- Continue cooking 15-20 minutes or until done.

EASY SMOTHERED CHICKEN BREASTS
After reading this recipe here, it sounded so good that I had to put my personal touches to it. I'm not particularly fond of chicken breasts unless they're flattened to a pulp and delicately browned after being dredged in flour. After that I followed the original recipe except I added crushed red peppers and Italian seasoning. I served this with fettuccine alfredo and roasted asparagus on the side. Delizioso!

- Mix flour, bread crumbs, garlic salt, and black pepper together in a bowl. Coat each chicken breast with flour mixture.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon, reserving bacon drippings; drain bacon on paper towels.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine sour cream, lemon juice, and paprika in a bowl until well combined. Place stuffing mix in a shallow bowl. - Place chicken in a casserole dish.
- Season to your liking with salt, pepper,and garlic powder (both sides).
- In a saucepan, combine all soups and butter, mix well (if too thick add 1/4 cup water); pour over chicken.

- Add carrots and potatoes.
- Cover and return to oven for 35 minutes.

BAKED SMOTHERED CHICKEN
A recipe I have made over 10 years from the Little Rock UMC cookbook. So EASY! A great Sunday family dish. Note that when made with breasts or thighs, you may need to add more of the water/flour mix for the gravy.

Steps:
- Season chicken with salt, pepper & garlic. Place pieces skin side down, one layer deep in a shallow baking pan lined with foil. Dribble the melted butter over the chicken, distributing well. Close foil tightly. Place in 450°F oven for 15-20 minutes or until chicken is slightly brown.
- While baking, use this time to blend together water & flour until smooth; set aside.
- Remove chicken from oven; tilt pan and blend into the drippings the water/flour mix. Gravy will start to thicken. Stir it around over bottom of pan and turn chicken, then salt & pepper chicken.
- Return to oven and reduce heat to 350°F and bake 45 - 60 minutes.
- Baste once or twice, adding a little boiling water if gravy has cooked down low before chicken is done. serve with rice or mashed potatoes.
