EDDIE'S HOMEMADE SALSA

There is nothing better than Homemade salsa. It wont be to long before tomatoes, peppers, onions, and a lot of herbs are ready for the harvest.

EDDIE'S HOMEMADE SALSA image

Steps:

  • Simmer all vegetables on top of stove for 30 minutes.
  • Meanwhile in a water bath canner bring enough water to a rolling boil to cover jars with 4 inches of water above lid.
  • Ladle hot salsa into clean jars, leaving 1/4 inch head space. Wipe rim of jars with a clean paper towel. Adjust lids. Lower jars into boiling water, when water returns to a boil begin timing 15 minutes.
  • After 15 minutes, remove jars from canner using canning jar lifter. Place in a draft free area to cool.
  • Let set for 24 hours.

8 to 10 - tomatoes peeled
2 medium white onions chopped
4 - bell peppers ( 2 red 2 green )
3 medium jalapeno peppers
1/2 cup(s) vinegar
1 (6 ) ounce(s) can tomato paste
1 teaspoon(s) chili powder
2 clove(s) garlic chopped
1 tablespoon(s) salt
1/2 teaspoon(s) oregano
1/2 teaspoon(s) cilantro

EDDIE'S HOMEMADE TOMATO JUICE

This recipe was my Mothers. If you like spicy tomato juice, you might like this. Add 2 Jalapeno peppers without the seeds and vains. I think you will love it. Also good on meatloaf.

Steps:

  • Simmer all ingredients except lemon juice and vinegar. 1 hour.
  • Put through strainer allowing some pulp through. Add lemon juice and vinegar heat to boiling
  • Ladle hot tomato juice into clean jars, leaving 1/4 inch head space. Wipe off rim of jars with clean paper towel
  • Put on lids and rings , adjust. Lower jars into boiling water to cover jars. When water returns to a boil begin timing 15 minutes.
  • Let set for 24 hours.

2 quart(s) tomatoes chopped
1 cup(s) water
1 - bay leaf
2 small onions chopped
2 stalk(s) celery chopped
1 teaspoon(s) salt
2 tablespoon(s) sugar
1/4 teaspoon(s) pepper
2 tablespoon(s) lemon juice
2 tablespoon(s) vinegar
2 - jalapeno peppers seeded and vained ( op)
