I am fast becoming hooked on quichés and breakfast casseroles. My tastes have changed so much since becoming a member of recipezaar. Things I would never eat before I love now. I guess I just needed to try them.

Ham Quiche image

Steps:

  • Mix ham, bell pepper, green onion, cheese and flour; toss all ingredients lightly.
  • Mix half-and-half gently into eggs.
  • Still gently; fold ham mixture into egg mixture.
  • Pour this mixture into unbaked pie shell.
  • Bake 10 minutes at 425 degrees, and then lower heat to 325 degrees and bake 20 minutes more or till done.

1 cup cooked ham (cut in strips)
1/3 cup red bell pepper (cut in strips)
1/3 cup green onion (chopped)
1 cup swiss cheese (shredded)
2 tablespoons all-purpose flour
2 1/3 cups half-and-half
3 eggs (slightly beaten)
1 (9 inch) pie crusts

Hash Brown Crusted Veggie and Ham Quiche image

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
  • In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.

  • Set a baking sheet on the middle oven rack; preheat to 425 degrees F. Scatter the ham and cheese in the pie crust. Whisk the eggs, half-and-half, chives, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; pour into the crust. Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ham and saute until just starting to brown.
  • Place the potatoes in a small saucepan and cover with vegetable oil. Cook over low heat until the oil just starts to bubble and the potatoes are tender, about 15 minutes. Remove the potatoes and place on a paper towel-lined plate.
  • Meanwhile, line a 9-inch pie pan with the prepared pie crust and pierce with a fork. Cover with parchment and fill with the dried beans. Blind bake the crust for 10 minutes. Let cool, then carefully remove and discard the paper and beans.
  • In a medium bowl, beat together the eggs, half-and-half, salt and pepper. Layer the empty pie shell with the potatoes, ham, and 1/2 cup of the cheese. Pour the egg mixture over the filling. Sprinkle the remaining 1/2 cup cheese and the green onions over the top. Bake on the bottom rack of the oven until the center just sets and the top is golden, 35 to 40 minutes.   • Preheat oven to 400°. Unroll pie crusts into two 9-in. pie plates; flute edges. Line unpricked pie crusts with a double thickness of heavy-duty foil. How to Cook a Country Ham image

Steps:

  • Scrub ham thoroughly with a stiff brush.
  • Place ham in large pot or pan--even a cooler will work. Cover it completely with water and allow to soak for 24 hours, (discard water).
  • Preheat oven to 325°F.
  • Put ham in large roaster fat side up and again cover completely with water. place in oven on lowest shelf and bake for 2 hours. Turn ham to other side and cook another 2 hours. It takes 4 to 41/2 hours in all or 15 to 18 minutes per pound for a good tender ham.
  • Remove ham from oven, but leave in water overnight (do NOT refrigerate).
  • The next day preheat oven to 425°F.
  • Remove and discard ham skin. Sprinkle fat with ground cloves.
  • Combine sugar with enough vinegar to make a paste and brush on ham. Bake for 20 to 30 minutes; let rest for 1 hour out of the oven, then slice and serve.
