  • Preheat oven to 350 degrees.
  • Spray a large rectangular baking pan (is this a 9X4 or 8X4 loaf pan?) with non-stick cooking spray. Set aside.
  • Combine: flour, sugar, baking powder and salt into large bowl. Mix to combine. Set aside.
  • In a separate large bowl combine: eggs, banana, oil and milk. Mix to combine.
  • Combine dry ingredients into wet ingredient bowl. Mix until combined. Stir in chocolate.
  • Pour mixture into prepared pan. Bake for approximately 1 hour OR until toothpick inserted comes out clean
  • Allow bread to cool in pan slightly before slicing and serving.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
  • Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

Steps:

  • 1. Preheat your oven to 160C. Line a 900g (23x13x7cm) loaf tin with parchment paper. Then put your 2 ripe bananas in a small bowl and mash them with a fork until they are a lumpy liquid consistency.
  • 2. Cream the butter and sugar together, using a hand mixer or a stand mixer, until they are pale and well blended together. Then keep the mixer on medium speed and add the eggs one by one. Add the banana to this mixture
  • 3. Weigh out the flour and add the bicarbonate of soda and baking powder to the measured flour. Add this to the banana mixture, stir well until all lumps are gone. Then mix in the chocolate chips.
  • Pour the batter into the tin evenly and bake for 55 mins. When baked let it cool for about 10 minutes then take out of the tin.

  • Preheat oven to 350°. In a large bowl, whisk the first 5 ingredients. In another bowl, whisk the bananas, yogurt, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips. , Fill 12 greased or foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Primarily a vegetarian, I like to bake cakes and breads without using eggs and am always on the look out for good eggless recipes. During one of my Googling sessions, I stumbled upon an egg-free banana bread/cake recipe. However, when I tried it out the bread came out hard and sank badly. So I improvised and here's my banana bread recipe for those of you who can't eat or don't like to eat eggs. I hope you enjoy it!

Egg-Free Banana Bread image

Steps:

  • Peel and mash bananas well. Set aside.
  • Sift all the dry ingredients together at least 2 times.
  • Add oil, vanilla, sugar to the mashed bananas and mix well.
  • Add the banana mixture to the flour mix.
  • Slowly add milk to make a batter of thick consistency.
  • Add nuts at this point. Mix together gently.
  • Pour banana bread batter in a greased loaf pan and bake in a preheated oven at 150 deg.C for 35-40 mins or until toothpick comes out clean from the center.
  • Cool for 5-10 minutes in the loaf pan, remove to a cooling rack to cool properly and serve slices.

2 ripe medium sized bananas
4 tablespoons oil (I use vegetable oil)
1/3 cup granulated sugar (if you prefer sweet bread, use 1/2 cup sugar)
3/4 cup flour
1/2 cup cold milk
1/2 teaspoon sea salt (or iodized salt)
1 teaspoon vanilla essence
1/2 cup nuts, of your choice chopped mixed (optional)
1/2 teaspoon cinnamon (optional)
