EGGLESS MIXED FRUIT (DRIED) SLICE.

I have been trusted with my grandmothers box of hand written recipes. This one is not dated but simply says from "Heather". I am keeping this here for safe keeping. I want to make this for my children's lunch boxes.

Eggless Mixed Fruit (Dried) Slice. image

Steps:

  • Melt the butter with the honey.
  • Meanwhile in a medium sized bowl, add the first4 ingredients and mix.
  • Pour the butter mix into the bowl and mix.
  • Pour the batter into a greased 15x20 cm tin and bake at 180 oC until golden, about 20 minutes.
  • Ice while warm, not hot. Sprinkle coconut over the top and let cool completely.
  • To make icing, mix sugar, lemon juice and butter and mix until smooth.

1 cup self raising flour
250 g dried mixed fruit (sultanas, raisins, glace cherries, apricots, dates, mixed peel etc)
1/2 cup desiccated coconut
125 g butter
1 tablespoon honey
1 1/3 cups icing sugar
3 tablespoons lemon juice
1 tablespoon butter, softened
1/3 cup coconut, extra

Steps:

  • Preheat oven to 180º C (350º F). Grease 11" X 7" pan.
  • Mix together flour, eggs, butter, sugar and mixed spice.
  • Add coconut and fruit. Beat well.
  • Press into pan and bake for 26-30 minutes.
  • Cut into squares while warm.

1 cup whole wheat flour
2 eggs
75 g butter, melted
1 cup raw sugar
1 teaspoon mixed spice
1 cup coconut
1 1/2 cups dried fruit (eg. mixed fruit, sultanas apricots)

An easy, healthy and delicious fruit slice that's great for the lunchbox or with a cuppa ! I use a mix of sultanas, currants and raisins for the dried fruit but you could add any other dried fruits.

Steps:

  • Preheat oven to 190C and line a 28cm x 18cm pan with baking paper.
  • Melt butter in a large saucepan.
  • Add brown sugar and stir until dissolved.
  • Remove from heat and allow to cool slightly.
  • Add egg, fruit, sifted flour and spice and mix well.
  • Press into pan and bake for 20 minutes.
  • The slice should be soft and chewy rather than crisp.
  • Allow to cool and then cut into squares.
