EL PASO PASTA BAKE
A wonderful tasty dish for just about any occasion. You can adjust the heat by using mild Italian sausage or mild Chorizo. I frequently take this to work or pot lucks and I never have any leftovers.

Steps:
- Preheat oven to 350 degrees.
- Crumble sausage or Chorizo in a large frying pan.
- Brown over medium heat, drain off fat.
- In a large bowl combine sausage, pasta, Monterey Jack- Colby cheese, sour cream, green chiles, and pimientos.
- Spoon into a shallow 2 1/2 quart casserole dish.
- Cover and bake 30 minutes.
- Sprinkle with Cheddar cheese and paprika.
- Bake uncovered for 10-15 additional minutes.
- You are done-enjoy!

- Pasta - Boil water with 1 tbsp salt. Add pasta, bring back up to boil then cook per packet directions MINUS 2 minutes. Should be just cooked, still slightly firm in middle. Drain, return to pot.
- Heat half butter & 1 tbsp oil in a large pot over high heat. Stir in garlic for 10 seconds, then cook your raw meat and vegetables with a sprinkle of salt and pepper. Meat must be fully cooked - will not cook further in oven.
- Start here if you have NO COOK Add Ins (like canned tuna): Melt butter in large saucepan over medium heat. Add garlic and stir for 10 seconds, then stir in flour.

- Pour in water, salsa, tomato paste and taco seasoning. Stir gently to combine and add in the uncooked penne pasta. Bring to a boil and then lower to low-medium heat.
- Cover the pan with a lid and let the pasta simmer for about 8-10 minutes, until the pasta is tender.
- While the pasta is cooking, preheat oven to 375 F and line a casserole dish with the tortilla bowls.
