Emeril's Childhood Favorite: Crabmeat-Stuffed Shrimp image

Steps:

  • Preheat the oven to 375 degrees F. Butter a large baking dish and set aside.
  • Place the crabmeat in a large bowl and season with the Essence. Cover and refrigerate until ready to use.
  • In a large skillet, melt 4 tablespoons butter over medium-high heat. Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes. Add the parsley and the garlic, and cook, stirring, for 1 minute. Remove from heat and let cool.
  • Add the cooled vegetables to the crabmeat and toss to combine. Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently with a large wooden spoon. Add 1 cup of the cracker crumbs, the salt, and pepper, and stir gently, being careful not to break up the crabmeat.
  • Mound about 2 tablespoons of the crabmeat stuffing into each shrimp, press gently to close, and place, stuffed sides up, in the prepared baking dish. Sprinkle the remaining 1/2 cup of the flaky, buttery cracker crumbs over the stuffed shrimp and drizzle with the remaining melted butter. Bake until golden, about 20 minutes.
  • While the shrimp are baking, heat a large saute pan over medium-high heat. When the pan is hot, add the olive oil. Add the garlic and crushed red pepper and cook, stirring continuously, for 1 minute. Add the kale and saute until the kale is just wilted, about 3 to 5 minutes. Season with salt and pepper.
  • Place the kale on 4 plates. Remove the shrimp from the oven and divide among plates, on top of the kale. Garnish with parsley and lemon wedges. Serve immediately.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

  • Combine the rum, Licore Strega, puree, lemon juice, elderflower syrup, flower water and egg whites in a mixing glass or tin and dry shake (without ice) for approximately 10 seconds. Add a scoop of ice and again shake for 10 to 15 seconds. Strain the contents into a double old-fashioned glass or oversize tumbler over ice. Garnish with the thyme.

Old time cooks garnished the dish with chopped hard-boil eggs. If you can, purchase shrimp with the heads and tails intact so that you can use them to make a stock. (In a pinch, you can substitute 1 quart of chicken broth.)"

Emeril's Shrimp Stew image

Steps:

  • Peel the shrimp and reserve the shells and heads.
  • Refrigerate the shrimp and put the shells and heads in a large saucepan. Add the water, quartered onion, bay leaves, and 1 tablespoon of the salt. Bring to a boil, then reduce the heat to medium and simmer, uncovered, for 30 minutes.
  • Remove from the heat and strain through a fine-mesh strainer.
  • Discard the peelings and set aside the shrimp stock.
  • Combine the oil and flour in a large cast-iron pot or enameled cast-iron Dutch oven over medium heat.
  • Stirring slowly and constantly, make a roux the color of peanut butter, 15 to 20 minutes.
  • Add the chopped onion, bell pepper, and celery and cook, stirring, until soft, 6 to 8 minutes. Add the shrimp stock and whisk to blend with the roux. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, for 1 1/2 hours.
  • Add the shrimp, the remaining 1/2 teaspoon salt, and the cayenne and cook for 20 minutes.
  • Remove from the heat and stir in the parsley.
  • Ladle into individual soup bowls, garnish with the chopped eggs, and serve hot.
  • Note: The stew can also be served over white rice.

Emeril's Easy Barbecue Shrimp image

Steps:

  • In a medium bowl, toss the shrimp with half of the cracked pepper, 1 teaspoon of the Creole seasoning, and the rosemary until evenly coated. Cover and refrigerate until ready to use.
  • Heat 1 tablespoon of the oil in a 12-inch skillet over high heat. Add the shrimp shells and heads and cook, stirring a few times, for 3 minutes. Add the wine, water, Worcestershire, lemon juice, onion, garlic, and hot sauce. Bring to a boil, reduce the heat to a simmer, and let gently bubble for 45 minutes. Strain through a coarse strainer; you should have about 1 cup of barbecue base.
  • Heat a 14-inch skillet over high heat. Add the remaining 2 tablespoons oil, then the shrimp and cook for 2 minutes, searing on both sides. Pour in the barbecue base, reduce the heat to medium, and simmer until the shrimp are cooked through, about 1 minute. Remove from the heat; whisk in the butter, one piece at a time, not adding another until the previous piece is fully incorporated in the sauce.
  • Transfer the shrimp to a serving platter or small individual plates. Spoon the sauce over the shrimp and serve immediately with the Jalapeno Biscuits.

I made this recipe many years ago after seeing it on Emeril's show. The flavour is out of this world.

Emeril's BBQ Shrimp image

Steps:

  • Peel the shrimp, leaving only their tails attached. (I use zipper back shrimp).
  • Reserve the shells, sprinkle the shrimp with 1 tablespoon of the Essence, and half teaspoon of the black pepper. Use you hands to coat the shrimp with the seasonings. Refrigerate the shrimp while you make the sauce base.
  • Heat 1 tablespoon of the oil in a large pot over high heat. Add the onions and garlic, and cook, stirring, for 1 minute. Add the reserved shrimp shells, the remaining Essence, the bay leaves, lemons, water, Worcestershire, wine, salt, and the remaining black pepper. Stir well and bring to a boil. Reduce the heat and simmer for 30 minutes.
  • Remove from the heat, allow to cool for about 15 minutes, and strain into a small saucepan. There should be about 1 1/2 cups. Place over high heat, bring to a boil, and cook until thick, syrupy, and dark brown, for about 15 minutes. Makes about 4 to 5 tablespoons of the sauce base.
  • Heat the remaining 1 tablespoon of oil in a large skillet over high heat. When the oil is hot, add the seasoned shrimp and cook, occasionally shaking the skillet, for 2 minutes. Add the cream and all of the sauce base. Stir and simmer for 3 minutes.
  • Transfer the shrimp to a warm platter with tongs and whisk the butter into the sauce. Remove from the heat. Makes about 2 cups. Mound the shrimp in the center of a platter. Spoon the sauce over the shrimp over rice. Garnish with chopped chives.

This recipe is from Emerils cookbook "Emeril's kitchens", which is basically a compilation of recipes from all of his restaurants. This one is from Delmonico's Steakhouse. It is really easy prepare despite all the ingredients. It is absolutely the best shrimp cocktail I have ever eaten.

Creole Boiled Shrimp Cocktail image

Steps:

  • FOR SHRIMP:.
  • In a large bowl toss the shrimp with 2 tablespoons of the creole seasoning or essence.
  • Coat evenly.
  • Combine 3 gallons water, the Zatarains boil, salt, remaining 2 tablespoons of creole seasoning, the 2 halved lemons, onion, celery, bay leaves, and garlic in large stockpot.
  • Bring to a boil and taste.
  • The salinity of the water should be that of saltwater.
  • Add the shrimp and cook stirring frequently until pink and cooked through, 3-4 minutes.
  • drain in colander, transfer to a bowl and cover with plastic wrap and refrigerate about 1 hour.
  • FOR CREOLE SEASONING:.
  • Combine all ingredients and mix thoroughly.
  • Store in an airtight container for up to three months.
  • FOR COCKTAIL SAUCE:.
  • Combine all ingredients and whisk well.
  • Cover and chill for 2 hours.
  • Will keep in the refrigerator for up to two days.
  • Serve shrimp with the remaining lemon cut into wedges and the cocktail sauce.

SHRIMP BISQUE (EMERIL'S)

This is a wonderful dish and well worth the time it takes to make. You can certainly make your stock one day and refrigerate it overnight. The next day let your stock come to room temperature and put your Bisque together. I listed cornstarch as an optional ingredient because I like my Bisque to be a little thicker than a thin soup. If it comes out thin just simply mix about 4-5 tbsp cornstarch in cold water and add to the Bisque at the end. Cook until slightly thickened. If you don't care for spicy you may want to start out using only 1/8 tsp cayenne pepper. You can always add more late if you wish. If you add a salad and hot bread you have a wonderful dinner. This will serve 12 as an appetizer and 6 as a main course.

Shrimp Bisque (Emeril's) image

Steps:

  • Stock:.
  • In a large stockpot over medium-high heat heat the olive oil.
  • Add the chopped onions, celery, carrots, salt and black pepper.
  • Saute the vegetables for about 30 minutes or until soft.
  • Squeeze the lemon halves in the vegetables and add lemon rinds to pot.
  • Add all remaining stock ingredients.
  • Bring stock to a boil and reduce heat to medium and simmer uncovered for 1 hour.
  • Remove from heat and strain stock using a cheesecloth or a fine-mesh strainer and set aside.
  • This will make about 3 quarts.
  • Bisque:.
  • In a large heavy Dutch oven heat the olive oil over medium high heat.
  • Add the onions, celery, carrots, salt and cayenne pepper.
  • Saute until vegetables are soft about 20 minutes.
  • Add the herbs, tomato paste and brandy.
  • Cook and stir vegetable mixture for about 5 minutes.
  • Add the shrimp stock and bring to a boil.
  • Reduce heat to medium and simmer for 1 hour.
  • Make a beurre manie' by combining the softened butter and flour in a small bowl and mix until have have a smooth paste.
  • Add the mixture one tablespoon at a time whisking well after each addition.
  • Cook for 5 minutes.
  • Slowly add the cream and shrimp and stir to mix.
  • Bring to a gentle simmer and cook for 15 minutes.

Emeril's Simple Boiled Shrimp image

Steps:

  • Fill a large stockpot with 4 quarts water. Squeeze lemons into water, and add garlic, onion, bay leaves, 1 tablespoon Emeril's Essence, salt, cayenne, and liquid crawfish boil. Place over high heat and bring to a boil; let boil 5 minutes.
  • Season with remaining tablespoon Emeril's Essence and add to boiling water; turn off heat. Let stand until shrimp are just cooked through 1 1/2 to 2 minutes. Drain and chill before serving.

EMERIL'S SHRIMP ETOUFFEE

Bought a new Dutch Oven and this recipe from Emeril Lagasse (sp?) came with it. Gave it a try and it was pretty simple and DH loved it. It looked pretty impressive too. Served it with steamed white rice. I'm guessing at the serving size as it only states 3 quarts. Edited to include shrimp and amount (how could I forget something that important) thanks Grease for bringing it to my attention. Also for the Essence I used recipe#14372.

Emeril's Shrimp Etouffee image

Steps:

  • in 3.5 quart dutch oven (or heavy pan) set over medium heat, melt butter, Once butter melted, add flour to pot and stir continuously to make a roux, Stir roux over medium heat until it becomes the color of peanut butter, about 5 minutes.
  • Add onions, peppers, celery and garlic to roux, cook stirring often for about 10 minutes.
