BROCCOLI CHEDDAR CRESCENT RING

Your favorite comfort soup finds a cozy home in crescent dough. This shareable ring is perfect as a vegetarian option for a big crowd.

Broccoli Cheddar Crescent Ring image

Steps:

  • Preheat the oven to 375 degrees F. Add the broccoli, oil, crushed red pepper, garlic and 2/3 cup water to a large skillet and stir until combined. Cover and bring to a boil. Let the broccoli steam until bright green and just crisp tender, about 3 minutes. Remove the lid and let the water continue to boil until it is completely evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon salt and a few grinds of pepper and transfer to a medium bowl. Let cool slightly, about 15 minutes. Stir the cream cheese.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the broccoli mixture over the short ends of the triangles closest to the ramekin. Cover the broccoli with the cheese slices and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the broccoli mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with Ranch dressing for dipping.

4 cups finely chopped broccoli florets (about 13 ounces)
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 clove garlic, finely chopped

6 ounces cream cheese, diced
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
5 slices Cheddar, cut in half (about 5 ounces)
Ranch dressing, for serving

Rocky Road Crescent Ring image

Steps:

  • Preheat the oven to 375 degrees F. Cut a 10-inch circle of parchment and put it on a turned-over baking sheet.
  • Unroll the crescent roll dough on a work surface and separate the triangles. Spoon about 1 teaspoon each chocolate cookies, chocolate chips, almonds and marshmallows onto the short end of each crescent triangle. Fold in the sides over the filling, then roll up from the short end to the opposite point, making sure the filling stays inside. Tightly pinch the edges together to seal completely.
  • Place a 4-inch ramekin in the middle of the prepared baking sheet and arrange the crescent rolls in circle around the ramekin; the rolls should be touching end to end. Remove the ramekin.
  • Bake until the rolls are just beginning to brown, about 8 minutes. Remove from the oven and put the remaining marshmallows in the center ring. Return to the oven and bake until the rolls are golden brown and the marshmallows are melted, puffed and golden brown on top, about 8 minutes more. Use the parchment liner to slide the ring onto a serving plate. Drizzle with the hot fudge sauce and sprinkle with additional almonds. Serve immediately.

3 tablespoons crushed chocolate cookies
3 tablespoons semisweet chocolate chips
3 tablespoons sliced almonds, plus more for serving
1 1/3 cups miniature marshmallows

Chicken Enchilada Ring image

Steps:

  • Preheat oven to 375F.
  • Chop chicken and olives using Food Chopper; place in mixing bowl.
  • Add cheese, green chilies, mayonnaise, and seasoning mix.
  • Seed and chop 1 tomato.
  • Slice lime in half.
  • Using Juicer, juice one half of lime to measure 1 teaspoon juice.
  • Reserve remaining lime for garnish.
  • Add chopped tomato and lime juice to chicken mixture.
  • Reserve 2 tablespoons crushed chips; add remaining chips to chicken mixture and mix well.
  • Sprinkle reserved crushed chips over cutting board.
  • Unroll crescent dough.
  • Place dough, sticky-side down, onto crushed chips; press down lightly, so chips adhere to dough.
  • Separate dough into triangles.
  • Arrange triangles, chip side down, in a circle on round baking stone (or round pizza baking sheet) with wide ends overlapping in the center and points towards outside.
  • (There should be a 5-inch diameter opening in center.) Scoop chicken mixture evenly onto the wide ends of each triangle.
  • Bring points of triangles up over filling and tuck under wide ends of dough at center of ring.
  • (Filling will not be completely covered.) Bake 20-25 minutes or until golden.
  • For garnish, cut remaining tomato into 8 wedges.
  • Cut remaining half of lime into 4 slices; cut in half.
  • Arrange between openings of ring.
  • Cut and serve with salsa and sour cream.
