EASY LAZY LASAGNA
Fast, easy and delicious! You can make this recipe with different kinds of noodles and vegetables and also you can add more or less hot peppers (or Tabasco!) if you enjoy spicy food!

Steps:
- In a large pot of boiling water, cook pasta until tender but firm; drain.
- In a large skillet, cook beef over medium-high heat until browned. Add onions and carrots; cook for 3 to 4 minutes. Stir in pasta sauce and Italian seasoning (oregano or basil). Remove from heat and set aside.
- In a bowl, combine ricotta cheese, egg and 1/2 cup of the mozzarella cheese. Set aside.
- To Assemble: Spread half of the meat mixture on bottom of greased 13x9-inch baking dish. Top with all of the pasta. Spread all of the cheese mixture over pasta. Top with remaining meat mixture. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
- Bake in preheated oven, uncovered for 35 to 45 minutes or until bubbling.
- Let stand for 10 minutes before serving.

- Assembly Directions:.
- In a large bowl, mix cottage cheese, mozzarella cheese , eggs, parsley, onion powder, basil and pepper until well blended; set aside.
- In a medium bowl, mix together spaghetti sauce and cooked ground beef. In a 9x13-inch glass baking dish or (2- 8x8-inch pans) spread 3/4 cup meat sauce on the bottom. Layer 3 uncooked noodles on top of the meat sauce. Next spread 1/2 of the cheese mixture and 1-1/2 cups meat sauce. Layer 3 more uncooked noodles on top of the meat sauce. Spread with remaining cheese mixture. Top with remaining 3 noodles and remaining meat sauce. Pour water around the outside edges.
- Freezing Directions:.
- Place dish in a 2-gallon freezer bag. Or, if you want to wrap it in foil, cover the top of the lasagna with wax paper or plastic wrap and then the foil, because the acid in the tomato sauce will leave small holes in the foil. Label, seal and freeze.
- Serving Directions: Remove pan from freezer and thaw at least overnight in the refrigerator. Bake covered at 375°F for 45 minutes. Uncover and bake an additional 15 minutes. Let stand 10 minutes. Serve with grated Parmesan cheese, if desired. To bake from the frozen stage, add 30 minutes to the total baking time.

EXTRA EASY LAZY DAY LASAGNA!
I love this recipe because I don't have to cook the noodles, no slimy mess!!! Found it on the label of a jar of spaghetti sauce.....so simple and my family loves it!

Steps:
- Brown meat in skillet, add spaghetti sauce and heat through.
- In 3 quart oblong pan spread 1/3 of meat mixture to cover bottom, top with 4-5 uncooked noodles, half the cottage cheese and one cup of the mozzarella.
- Spread on 1/3 of meat mixture, remaining noodles, remaining cottage cheese, remaining cup of mozzarella, then top with the final 1/3 of the meat mixture.
- Right before baking pour 1/2 cup of water around inside edges of the pan, cover and bake 45 minutes at 375 degrees.
- Remove cover, sprinkle with desired amount of Parmesan, and bake 10 more minutes.
- Let stand 10 minutes before cutting and serving.
LAZY MAN'S LASAGNA
Steps:
- To assemble:
- Preheat the oven to 400 degrees F. Cover the bottom of a deep baking dish with a layer of Bolognese sauce. Lay out the uncooked pasta sheets over the sauce until they cover the baking dish entirely. Cover the pasta with another generous layer of Bolognese sauce. The liquid from the sauce will cook the dried pasta so be sure to add enough sauce. Drizzle the bechamel sauce and sprinkle the mozzarella on top, until both are distributed evenly. Add another layer of dried pasta, laying the sheets in the opposite direction. Repeat the process of adding sauces, mozzarella, and pasta for another 2 to 3 layers or until two-thirds of the baking dish's depth is filled. Top off the last layer of sauces and mozzarella with a generous sprinkle of the Parmigiano cheese.
- Place the pan in oven for approximately 40 minutes and let rest for 20 minutes before serving.
- In a hot saucepan, melt the unsalted butter with the olive oil, and add the carrots, onion, celery, and chili pepper. Cook the ingredients over medium heat, until they are soft. Add a sprig of rosemary. Add the ground beef and pork, and cook until golden brown. Remove the rosemary sprig, and add the white wine. Let reduce. Add the tomato sauce or La Salsa di 5 Minuti, and let simmer on low heat for 1 hour. Before serving, add basil leaves and salt to season. Serve immediately.
- Salsa di 5 Minuti:
- Heat olive oil in a saucepan and add onion, garlic, and chili peppers. Gently fry ingredients together. Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.
- Season with salt to taste. Add basil leaves at the very end.
- Bechamel:
- In a saucepan, heat up the milk, and bring to a gentle simmer. In another saucepan, melt the butter and immediately add the flour.
- Lower the heat, and mix until the butter has absorbed all the flour and is the consistency of thick dough. Make sure the butter-flour mixture does not burn or brown.
- Remove the saucepan from the heat, and whisk in a couple of ladles of heated milk into the butter-flour mixture. Whisk until the flour has absorbed all of the milk. Put the saucepan back on the burner over medium heat, and whisk in the remainder of the milk.
- Continue whisking until the sauce thickens and becomes a creamy velvety consistency.
LAZY DAY LASAGNA
Instead of lasagna noodles, you use cheese ravioli. How simple, yet how utterly tasty. You'll love this recipe for its ease of preparation as well as its delicious flavor. Recipe is from Rosina/Celentano.

- Preheat oven to 375 degrees F. Have ready a 9- x 13-inch baking dish.
- Thaw cheese ravioli in hot water for 1 minute. Thaw 36 meatballs. Crumble meatballs in small pieces using a fork or food processor.
- Pour a thin layer of spaghetti sauce to over bottom of baking dish. Arrange 12 ravioli in a single layer over top of sauce. Sprinkle half of the crumbled meatballs over the ravioli. Sprinkle half the cheese over the meat.
- Repeat process with a second layer of sauce, ravioli and meat. Add a thin layer of sauce over the top.
- Bake for 45 minutes, covered. Uncover and sprinkle with rest of cheese. Bake uncovered for an additional 10-15 minutes. Let stand 5-10 minutes before serving.
- Note: For a different flavor, substitute Sausage Meatballs.

- In two greased 10x6x2-inch baking dishes, make layers in the following order: half each noodles, cottage cheese, Mozzarella slices, spaghetti sauce, and sprinkled Parmesan cheese.
- Repeat.
- Make certain the dry noodles are completely covered by sauce.
- Wrap pans completely with foil; label and freeze.
- (To make this meal incredibly rich, add one 8-ounce package cream cheese.
- Pinch off nickel-sized portions of cream cheese and plop evenly over lasagna just before adding the second layer of uncooked pasta.)
- To Serve: To thaw, take meal from freezer at least 24 hours before serving.
- Place in refrigerator.
- Bake tightly covered at 350 degrees for about 45 minutes, or until edges are bubbly and center is hot.
- Take cover off during final 10 minutes of cooking time.
- Let stand 10 minutes before serving.
SUPER CHEESY HOMETOWN LASAGNA

- For the meat sauce: In a stockpot or Dutch oven, combine the beef (do not brown first), tomato sauce, tomato paste, chili powder, sugar, salt, pepper, garlic salt, bay leaves and onion. Add 2 cups water. Mix until combined. Cover and simmer over medium-low heat for 1 1/2 to 2 hours, stirring occasionally. Stir in the vinegar and simmer for another 30 minutes.
- For the lasagna: Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray and place the dish on a rimmed baking sheet.
- In a medium bowl combine the ricotta, basil, parsley, garlic salt, red pepper flakes, if using, and egg and stir until well blended.
- Spread 2 cups meat sauce across the bottom of the prepared baking dish. Place 4 noodles over the sauce-it is okay if they overlap slightly. Dollop 2/3 cup of the ricotta mixture on the noodles, then spread it in an even layer. Top the ricotta with 4 slices ham, then 4 slices provolone. Sprinkle 1 cup mozzarella over the provolone. Repeat the layering-sauce, noodles, ricotta, ham, provolone, mozzarella-twice more. Top with another layer of noodles, then the Parmesan and the remaining mozzarella.
- Cover the baking dish tightly with foil. Bake until the dish is bubbling and the noodles are cooked (you can test by poking with a sharp knife to make sure the noodles are soft), about 50 minutes. Remove the foil and return to the oven until the cheese is bubbling and golden brown, another 10 to 15 minutes. Let the lasagna rest for 10 minutes, then serve warm.
LAZY-DAY OVERNIGHT LASAGNA
This is the lasagna recipe that I have used for years. I like the fact that you don't have to cook the noodles first. Found this in one of those cookbooks that you find at the check out stand. My recipe is getting tattered and worn so I thought I would post it here for safe keeping. Cooking time does not include setting overnight. I've posted the recipe to be gluten free, but you could easily use regular noodles in place of the brown rice lasagna.

- Brown ground beef in a large skillet; drain well.
- Add spaghetti sauce and water and blend well; simmer 5 minutes.
- In a medium bowl, combine ricotta, chives, oregano and egg and mix well.
- In bottom of ungreased 13x9 baking dish or lasagna pan, spread 1 1/2 cups of meat sauce.
- Top with half of the noodles, half of the ricotta cheese mixture and half of the mozzarella.

LAZY DAY LASAGNA
This is a quick and easy dish resembling Lasagna for those who don't want to make the time consuming real thing. Everyone loves it in my house and the leftovers are better the next day.

- Cook ground beef and sausage until browned.
- Add spaghetti sauce and simmer a few minutes.
- Meanwhile cook noodles according to package directions.
- When noodles are done, drain and add to sauce mixture and mix well.
- Pour half of the sauce and noodle mixture into a 12x9 glass baking dish.
- Add cottage cheese and spread across mixture.
- Add the remaining sauce mixture and top with cheddar cheese. Bake in a 350 degree over @ 20 to 25 minutes or until cheese is melted.
EXTRA CHEESY LASAGNA FOR ROY
I don't eat lasagna myself but I do make it on occasion for my family. When we used to live in this little side by side duplex, I swear that my neigbor Roy could smell it through the walls. I still make it every time I go down to see him and his girlfriend. And yes it does say 2 lbs of mozarella. The man loves his lasagna cheesy.
