CHOCOLATE BUTTERCREAM ICING
This is the "Kathleen's Chocolate Icing" from the "New Basics Cookbook". It is a fabulous (old-fashioned) buttercream frosting that isn't too sweet and can almost double for mousse! Also, I really like this icing for a chocolate mayonnaise cake!

Steps:
- Combine the chocolate and butter in a small heavy saucepan and melt over very low heat.
- Remove the pan from the heat, stir in the milk and vanilla, and transfer the mixture to a mixing bowl.
- Add the sugar gradually, beating with an electric mixer. Continue beating until the mixture is smooth--it will be runny.
- Refrigerate the mixture for 1 hour, beating every 15 minutes. (The icing will stiffen.).

FABULOUS CINNAMON ROLL POPCORN
This easy treat is a real favorite around my house. I got the idea from Orville Redenbacker's Cinnabon Popcorn. This is the amount of icing and cinnamon I usually use but you can do more or less to taste. Enjoy!!!

Steps:
- Warm icing in small, microwave safe bowl - usually about 15 - 20 seconds. You are looking for a smooth consistency, not bubbly so watch closely.
- Add Cinnamon and Vanilla, mix well and set aside.
- Pop popcorn in microwave according to package directions.
- Transfer popcorn to large bowl and drizzle icing mixture over the top.
- Toss and enjoy!

- Melt white chocolate. Make sure it’s completely smooth! Set aside while you mix together the other ingredients.
- Start blending egg whites in a stand mixing bowl with whisk attachment and slowly start adding the powdered sugar. Continue blending until the sugar has been completely liquifies.
- Add extracts and salt. Increase speed to high until the mixture becomes thick and glossy, stopping half-way through to scrape down sides of bowl. It will take about 4-5 minutes total.
