Steps:
- Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with cooking spray.
- Arrange bacon on a microwave-safe plate. Cook bacon in microwave for 75 seconds.
- Place a slice of bacon into each muffin cup so that the bacon lines the edges of the cup.
- Beat eggs and milk together in a bowl; ladle into muffin cups. Top 4 of the egg portions with 1 tablespoon each of the green onion, 4 with 1 tablespoon each jalapeno pepper, and 4 each with 1 tablespoon roasted red pepper.
- Bake in preheated oven until only slightly moist on top, about 20 minutes. Season the muffins with salt and pepper; top with Cheddar cheese. Continue baking until the cheese melts, about 5 minutes more.

Steps:
- Grease 12 muffin cups.
- Preheat oven to 400 degrees.
- Cook bacon in a pan until crisp, then chop into small pieces.
- Mix together flour, baking powder, sugar, and salt.
- In a seperate bowl mix egg, milk, and oil.
- Add all at once to the dry ingredients along with bacon until just combined.
- Mixture will look somewhat lumpy but do not mix more.
- Fill the muffin cups 2/3rds of the way full.
- Bake@ 25 minutes.

MAPLE BACON MUFFINS
A great grab'n'go breakfast muffin recipe born from the happy accident of getting maple syrup on your bacon after piling your brunch plate a little too full! (And yes, I'm speaking from experience!!) I often add more bacon than the recipe calls for and you can use whatever pancake syrup you like or have on hand.

- Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
- Preheat oven to 400 degrees F (200 degrees C). Coat 24 muffin cups with cooking spray.
- Mix flour, Cheddar cheese, baking powder, garlic salt, and black pepper together in a large bowl.

FAKIN' BACON MUFFINS

- 1. Preheat the oven to 400°F. 2. In a small skillet over medium heat, sauté the fakin' bacon and onion in the canola oil until lightly browned. Set aside to cool. 3. Sift the dry ingredients together in a large bowl. Add the fakin' bacon and toss to coat. If necessary, crumble any large chunks of fakin' bacon. 4. Whisk the wet ingredients in a medium bowl or blend in a food processor. Pour the wet ingredients into the dry mixture. Stir just until mixed. Do not overstir. 5.
