FALL HARVEST SALAD

Steps:

  • In a bowl, combine the vinegar, oil, chives, sugar, salt and cayenne; whisk in cream until well combined. Set aside., In a small skillet, melt butter over medium heat; stir in pecans and sugar. Cook and stir until pecans are toasted and coated with sugar. Remove pecans to paper towels to drain and cool., In a large bowl, combine the pear slices, lettuce, pecans and 1/3 cup vinaigrette and toss to coat.

1/4 cup white wine vinegar
1/4 cup olive oil
2 tablespoons minced chives
1 tablespoon sugar
1 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup half-and-half cream

1 tablespoon sugar
2 medium pears, thinly sliced

Be sure to watch the seeds/nuts carefully because they can burn quickly. The pepitas will take less time to toast than the pecans because they're smaller.

  • Cut the ends off the brussels sprouts and cut each in half. If there are any large-sized ones, cut them into quarters.
  • There are a few ways you can roast the squash. I like to de-seed it, slice into large chunks then roast and remove the skin and dice after roasting. You can easily peel the skin off after it cools a bit. Alternatively, cut the squash in half, remove the seeds and roast face down on a pan until you can pierce with a fork. Let cool until you can handle, then remove the skin and dice. And lastly, remove the seeds, peel and dice and roast on the pan with the brussels sprouts.

  • Make the Apple Vinaigrette: Combine all ingredients in a blender or food processor. Blend until smooth. Set aside, covered on the counter for 15 minutes, to allow the flavors to blend. Re-mix before using. Cover and refrigerate if making ahead.
  • Sweeten the fresh cranberries, if using: Add the fresh cranberries to a large skillet. Sprinkle with 3 Tbsp white sugar. Cook, tossing pan regularly, until cranberries are softened, but have not collapsed or burst. Remove skillet from heat and allow cranberries to cool and sit in sugar syrup while you prepare the salad.
  • Assemble the salad: Add mixed greens to bottom of salad bowl of plate. Place 3 or 4 fans of sliced apple over-top. Place a spoonful of cranberries next to the apple fan. Add some of the pecans next to the cranberries. Place a pear rose** next to the fanned apples. Sprinkle sunflower seeds over top. Sprinkle evenly with goat cheese crumbles. Drizzle with apple vinaigrette to serve.
