HUNGARIAN CREPES: PALACSINTA

Steps:
- Mix eggs, flour, milk, sugar and salt to make a smooth pancake dough. Let the dough rest for 1 to 2 hours.
- Stir in the carbonated water at the last moment, just before cooking the pancakes.
- Heat an 8-inch frying pan. When the pan is hot, add 1/4 teaspoon of the butter. Let butter melt and swirl to cover the bottom of the pan.
- Pour a ladle of the batter into the pan and gently tip and twist the pan so that the batter covers the entire bottom of the pan. When the top of the batter bubbles, turn the pancake over and cook for 4 or 5 seconds longer. Remove the pancake. Continue until the batter is all cooked; add butter before cooking each pancake.
- Serve by spreading raspberry jam, cocoa mix, or your favorite filling and roll up the pancake, serve with fresh berries.

This great Slovak dish makes a good breakfast dish and is filling. Sprinkle with powdered sugar and/or your favorite topping or syrup and enjoy!

- Beat milk, eggs, flour, sugar, and vanilla extract together in a large mixing bowl until the batter is thin and without lumps.
- Heat a large skillet over medium heat and grease with 1 tablespoon canola oil. Ladle enough batter into the skillet to cover the cooking surface in a thin layer. Cook until bubbles appear on the surface, 2 to 3 minutes. Flip with a large turner and cook until browned on the other side, about 2 minutes more.
- Remove cooked palacinky to a plate and roll into a log.

GRANDMA IRENA'S PALACSINTA (HUNGARIAN CREPES)
My Hungarian grandmother has made this for us ever since we were kids...certainly not health food but maybe one of the tastiest things you'll ever eat! Make it for breakfast or dessert.

- Combine the flour and eggs and mix until smooth. Add the milk, soda water, vegetable oil, and salt and mix to combine; refrigerate the batter overnight.
- To make the pancakes, heat a lightly greased frying pan over medium heat. Remove the batter from the refrigerator and mix well. Pour 1/4 cup of the batter into the pan and cook the pancake for about one minute. Flip it over and cook for another minute, or until golden brown. Remove the pancake from the pan and place it on waxed paper. Repeat with the remaining batter, stacking the pancakes while keeping them separate with waxed paper.
- To make the filling, combine the chopped almonds, 1/2 cup sugar, milk, vanilla extract, and rum (if desired) in a saucepan. Cook and stir over low heat until the sugar is dissolved and the mixture is creamy. Allow it to cool slightly before filling the pancakes.
- For the chocolate topping, combine the water, 1/2 cup sugar, and chocolate in a saucepan and cook over low heat just until the chocolate melts. Remove the pan from the heat and add the margarine, stirring until melted and combined.
- Spread 1 heaping tablespoon of almond filling onto each pancake, rolling them up and placing them on a platter. (You will have 10 to 15 total, depending on their size.) Pour the chocolate topping over the platter of rolled pancakes. If desired, warm the platter in a microwave for about 30 seconds before serving.

My mother would always make these for us on the weekends. I still make them and love them just as much. We always fill them with either jelly or jam. I made these once for a breakfast get together and also used flavored fruit syrup and whipped cream to go over the rolled palacinki.

- Combine sifted flour, sugar, and salt in a mixing bowl.
- Add the whole eggs, one at a time.
- Beat well after each addition.
- Add enough milk to make a thin batter.
- Beat until smooth.
- Stir in melted butter.
- Pour about 1/2 cup batter into a heated, lightly greased skillet.
- Swirl around skillet to coat bottom of pan.
- When brown on the underside, turn and brown on other side.
- Spread with jam, jelly, preserve or marmalade.
- Roll.
- Serve.
- Can sprinkle with powdered sugar, fruit syrups or whipped cream, if desired.

- In a bowl, whisk the eggs with 1/2 cup of the milk and the salt. Whisk in the flour until smooth, then whisk in the remaining milk and the butter; the batter should have the consistency of cream. Let the batter rest for 1 hour.
- Heat a 7-inch crêpe pan and brush with butter. Pour 1/4 cup of batter into the pan and rotate it immediately to coat the bottom evenly; pour any excess batter back into the bowl. Cook the crêpe over moderate heat until lightly browned on the bottom, about 30 seconds. Flip the crêpe and cook the second side until brown dots appear, about 10 seconds longer. Transfer to a large plate. Repeat with the melted butter and remaining batter to make 18 crêpes.
- In a saucepan, melt the apricot jam with the lemon juice; stir until smooth.
- Preheat the oven to 400°. Butter a 9-by-13-inch baking dish. Spread each crêpe with 1 teaspoon of jam and 1 tablespoon of walnuts. Fold it into quarters and transfer to the baking dish. Repeat with the remaining crêpes. Cover the dish with foil and bake for 10 minutes, or until hot. Sprinkle with the remaining walnuts and sift confectioners' sugar on top. Serve the crêpes warm, with chocolate sauce if you like.

- First you will make the filling.
- Mix 2 48 oz. (large) small curd cottage cheese, 1 cup sugar, 1 8 oz. Philadelphia Cream Cheese, and 8 egg yolks together to make the filling.
- Next you will make the batter.
- Beat 5 eggs until frothy.
- Add in 1 quart milk (slowly).
- Pour in 1 cup sugar.
- Add 2 3/4 cups flour.
- Grease 9-inch frying pan with butter.
- Pour 1/2 cup batter into heated 9-inch frying pan and make a thin pancake (Crépe). This will cook quickly.
- Next you will construct the crépes and fill them.
- Fill crépes with the filling carefully. You don't want too little filling and you don't want too much. I suggest anywhere from 1/2 to 3/4 cups filling.
- Roll the crépe carefully so as not to spill any filling.
- Place crépes in glass pan for cooking.
- Now add topping.
- Combine 16 oz. sour cream, 1 cup sugar, 4 egg whites, and 1 egg.
- Mix and pour over rolled crépes.
- Finally you will cook and chill.
- Cook for 1 hour at 350°F.
- Once done, chill for about 1 hour or until cold. If it happens to be winter, it works well to wrap the pan in foil and put on a table.

CHOCOLATE & WALNUT CRêPES/PALACINKE (LIDIA BASTIANICH)
These crêpes are often served with only a sprinkle of sugar or a bit of home-preserved fruits. Sometimes palacinke were more elaborate: filled with ricotta and baked or layered like a cake with different fillings in between. But the most luxurious-and Lidia's favourite-are palacinke spread with melted chocolate. You can use this recipe with any spread you like. This recipe is from her cookbook, "Lidia's Italy: 140 Simple and Delicious Recipes from the Ten Places in Italy Lidia Loves Most".

- To make the palacinke batter, whisk together the eggs, 2 cups water, the rum, vanilla, sugar, and salt in a large bowl, until well blended. Sift the flour on top, a bit at a time, whisking each addition in until smooth. Drizzle in 4 tablespoons of the melted butter, whisking until the batter has slightly thickened, with the consistency of melted ice cream. Finally, whisk in the lemon zest. Put the remaining 4 tablespoons of melted butter in a small cup and keep it warm.
- Break or chop the chocolate into small pieces, and put them in a bowl set in a pan of hot (not boiling) water. When the chocolate begins to melt, stir until completely smooth, and keep it warm, in the water, off the heat.
- Set the crêpe pan or skillet over medium-high heat until quite hot. Pour in a couple tablespoons of the reserved melted butter, quickly swirl it all over the pan bottom, then pour excess butter back into the cup, leaving the bottom lightly coated with sizzling butter. (If the butter doesn't sizzle, heat the pan longer before adding the batter.) Immediately ladle in a scant 1/3 cup of batter, tilt and swirl so it coats the bottom, and set the pan on the burner.
- Lower the heat to medium, and cook the palacinka for a little less than a minute, until the underside is lightly browned in a lacy pattern. Flip it over with a spatula, and fry for ½ minute or longer, until the second side is lightly browned, then remove it to a warm platter. Heat the empty pan briefly, then rapidly coat it with butter, fill it with batter, and cook another palacinka. Repeat the sequence, stacking up the finished palacinke on the platter, until all the batter is used up.
- Fill and serve the palacinke as soon as possible, while fresh and warm. Keep the platter in a warm spot, and cover the stack with a tent of foil or a large bowl turned upside down. Whip the heavy cream, unsweetened or with sugar to taste, to soft peaks. Stir the melted chocolate, and reheat it if necessary so it is smooth and warm.
- Take one palacinka off the stack, and place it with its lacy patterned side down. Spoon a generous tablespoon (or more) warm chocolate in the center of the pancake, and spread it over the palacinka, leaving an inch-wide border uncoated. Scatter a spoonful of chopped walnuts on the chocolate layer, then fold the round in half, hiding the fillings, and fold again into a plump quarter-round.
- Fill and fold all the palacinke the same way. For each serving, place two quarter-rounds, overlapping, on a dessert plate, heap some cream on top, scatter some nuts on top of the cream, and drizzle warm chocolate in streaks and squiggles over the palacinke and the plate.

- Beat eggs well.
- Add milk, salt, sugar, and vanilla, Gradually add sifted flour beating until smooth a a thin batter.
- Heat small frying pan (or crepe pan).
- Spray lightly with Pam.
- Pour in enough batter to cover pan with very thin layer.
- Tilt pan with circular motion with wrist so mixture spreads eveny.
- Pancakes cook very quicly, about 30 secs on each side.
- Spread cheese filling, or grape jelly, or lekvar, or any jelly you like on the pancake and roll.
- You can also eat plain with a little powdered sugar sifted on top.
- Cheese filling: mix all ingredients well, adding sugar to taste.
