OVEN ROASTED SWEET POTATOES

My Granny made this for Easter dinner. We were all sitting at the table commenting on how delicious it was. She sat down took a bite and sighed, Ahhh, I'll never make this again. We all told her she was crazy and asked for the recipe.

Oven Roasted Sweet Potatoes image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix sweet potatoes, sweet onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.
  • Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.

4 cups chopped peeled sweet potato
1 sweet onions (such as Vidalia®), cut into wedges
2 cloves garlic, sliced
3 tablespoons olive oil
1 tablespoon balsamic vinegar, or more to taste
1 pinch salt and ground black pepper to taste

In my never ending quest to find a new way to cook sweet potatoes, this idea came to me born out of three different sweet potato recipes I have posted. This will be on my table for Thanksgiving.

Fancy Oven Roasted Sweet Potatoes image

Steps:

  • 1. Cut ends off and peel sweet potatoes. Cut in half lenghtwise, and into large cubes. However you cut your potato, try to get all in the same size so they will cook evenly. Place pecans in food processor and pulse till very fine. NOTE: These can also be made using thin potato rounds.
  • 2. Pour olive oil or melted butter in mixing bowl. Add salt, pepper, cinnamon, nutmeg and brown sugar, Mix together wll. Add potatoes and mix by hand to ensure they are completely coated. Sprinkle on panko and pecans, and mix again. Grease cookie sheet with olive oil. Pour potatoes onto sheet, spread out so they are not bunched together. Scoop up any pecans not stuck to potatoes and place ontop.
  • 3. Bake 400° for 30 min on middle rack.

2 medium sweet potato
pinch coarse sea salt, opt
1/8 tsp black pepper
1/2 tsp cinnamon
1/8 tsp nutmeg opt.
1/4 c brown sugar or agave or honey
1/4 c olive oil (or melted butter)
1/4 c panko bread crumbs
1/4 c pecans, finely chopped

Make perfectly roasted sweet potatoes that are fluffy on the inside and lightly browned at the edges for a colourful side dish. Add a few sliced red onions to the roasting tin, if you like

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

  • Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef’s knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The “cubes” won’t be perfectly even, but that’s ok.
  • Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
  • Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.
