MEXICALLI CORN / " MEXICORN " SUBSTITUTE-COPYCAT-CLONE
This is quick, easy and a very colorful corn dish. Years ago a major canning company use to have what they called Mexicalli Corn. Several months ago my wife said she would like some. The stores no longer stocked it, so I set out to duplicate it. This is the results.

- Melt butter in a medium sauce pan over medium heat Add onions an suatee for 3 minutes.
- Add chopped peppers.Lawery's and Garlic power to pan and suatee for 3 more minutes.
- Drain 1 can of corn and half drain the second can Add corn to pan and reduce heat to simmer Heat until corn is heated through stirring frequently.

Steps:
- Stir all the dry ingredients together until thoroughly mixed.
- Cut the shortening in till well mixed.
- Store in freezer in a plastic bag for several months, or may store in cannister or jar on counter top for up to a month.
- When ready to use-- add water and biscuit mix, using enough of the water to make a soft but NOT sticky dough.
- Turn out on a floured towel or cabinet surface.
- Roll out about 3/4-inch thick.
- Cut with glass or biscuit cutter.
- Bake for 12 to 15 minutes at 450°.
- This will make about a dozen 2-inch biscuits.
ORIGINAL BISQUICK BAKING MIX COPYCAT
Use as an exact substitute for Original Bisquick Baking Mix in recipes. Original Bisquick does not contain powdered milk. Neither does this copycat recipe. This recipe also uses canola oil as a healthy substitute for solid shortening.

Ok we all saw the supposed right? If not read the title again. Yes this means I am not sure it works. I have been told it does by several people. I haven't tried it. Yes it is on the list to try. Yeah yeah.. I will measure the amounts when I make it and put that correction under yield.

- Use shortening that does not require refrigeration.
- In a bowl, stir together flour, baking powder, sugar, and salt.
- Cut in shortening till mixture resembles coarse crumbs.
- Store in an airtight container for up to 6 weeks at room temperature, or for up to 6 months in the freezer.
- Makes about 12 cups.
- Use to make Easy Biscuits or Easy Muffins.
- Easy Biscuits: Place 1 cup of Easy Biscuit Mix in a bowl. Make a well in the center.
- Add 1/4 cup milk.
- Stir with a fork, just till dough clings together.
- On a lightly floured surface, knead dough gently for 10 to 12 strokes.
- Roll or pat to 1/2 inch thickness.
- Cut with a 2 1/2 inch biscuit cutter, dipping cutter into flour between cuts.
- Place on a baking sheet.
- Bake in a 450 degree oven for 8-10 mminutes, or till golden.
- Makes 4.
- Easy Muffins: In a mixing bowl, combine 1 cup of Easy Biscuit Mex, and 1-3 Tbl. sugar.
- Combine 1 beaten egg and 1/4 cup milk; add all at once to biscuit mixture.
- Stir just till moistened (mixture should be lumpy.).
- Fill greased muffin cups 2/3 full.
- Bake at 400 degrees for 13-20 minutes, or till golden.

This is my gluten-free knock-off of Classic Bisquick® Baking Mix. This replaces cup-for-cup any recipe calling for Classic Bisquick®, not recipes calling for the gluten-free version of Bisquick®. Classic Bisquick® has fats in the mix whereas, the gluten-free version does not. My recipe contains oil and needs to be refrigerated after being mixed. It will last up to one week in an airtight container in the fridge. The addition of gluten-free cereal mimics the enriched flour aiding in the baking process as well as adding vitamins.
