Steps:

  • Chop one of the onions into rough chunks. Add to the split peas, bay leaves and turmeric in a large saucepan.
  • Add enough water to cover twice the amount of peas.
  • Bring to the simmer, skim off any scum, cover and let simmer for 60 minutes or until the peas are soft.
  • Keep an eye on them and add more water if necessary, they should be loose and sloppy like thick porridge at the end.
  • While the peas are cooking, slice the remaining onions finely and fry in a tablespoon of the oil until they are golden brown. Set aside.
  • When the peas are cooked, remove the bay leaves, blend the peas with the olive oil, garlic cloves and lemon juice until you have a smooth paste. Add water if the mixture is too stiff.
  • Season generously with salt and pepper.
  • Stir in half the fried onion.
  • Serve in a bowl with the rest of the fried onion, capers, chives and add a drizzle of olive oil.

  • Heat a tablespoon of the olive oil in a pot over medium heat. Add the onion. Sautee the onion for 5-7 minutes, or until it's clear and soft. Add the garlic and cook for 2-3 minutes, stirring frequently, or until the garlic is very fragrant.
  • Add the split peas and the water to the pot. Bring the water to a boil and reduce to a simmer. Simmer the split peas for 30-35 minutes, or until they're very tender. Most of the water should be absorbed into the split peas, but the mixture should be moist--similar to a thick soup.
  • Transfer the whole mixture to a food processor fitted with the S blade and add an additional tablespoon of olive oil, the lemon juice, salt, cumin, sumac, and red pepper flakes, if using. Process until the dip retains some of its texture, but is fairly smooth (you can also continue blending until it's totally smooth, if you prefer a uniform texture that's similar to hummus). Add a few splashes of water or another tablespoon of olive oil if desired, to create a thinner dip.
  • Top the dip with a drizzle of olive oil and any toppings of choice. Serve the dip warm, with pita chips, crackers, or veggies. Dip will keep in an airtight container in the fridge for up to four days.

  • In a pot, pour the 1/4 cup veggie broth and sauté the onion until soft. Add split peas and stir for a couple of minutes. Add the 1 cup broth, water, and salt and pepper to taste.
  • Bring to a boil and simmer over very low heat until split peas are totally soft, about 30 minutes. Check periodically to see if more water is needed.
  • Remove from stove and use an immersion blender to smooth it out. You can also allow to cool and pour into a food processor or blender. Add lemon juice, stir to incorporate and top with parsley to serve. Use as a dip or on a sandwich! Or just eat with a spoon!
