8 LAYER FIESTA DIP

This is so much better than your average 7 layer bean dip! You'll never want to eat that boring dip again! Make sure to try to use the same brand of enchilada sauce....I've found it really makes a big difference in the taste of the entire dish. This recipe is always gone within 20 minutes and every party that I take it to!!!!

Steps:

  • Spread unheated beans in the bottom of a 9x11 size glass dish or glass baking pan.
  • Pour enchilada sauce evenly over the beans.
  • Spoon on guacamole and spread evenly.
  • In a separate dish, mix together the taco seasoning and the sour cream until well blended.
  • Spoon this sour cream mixture over the guacamole and spread around evenly.
  • Sprinkle cheese on top of these layers until you have a complete "layer" of cheese.
  • Drain the cans of black olives and sprinkle them evenly on top of the cheese.
  • Do the same with the green onions, and then finally with the diced tomatoes.
  • Cover tightly and chill in refrigerator for about 2 hours.
  • Now, invite a few friends over, set it on the table with some tortilla chips, and watch it disappear!
  • This dish will keep for about a week if tightly covered in the refrigerator.
  • Combine a few spoonfuls of this dip with taco meat and place in tortillas or taco shells for an amazing ready to eat meal!

FIESTA APPETIZER

This dip is always a big hit with men-maybe because of the hearty blend of flavors. It stands up great as a leftover besides...if there's any left over. I was raised on a Montana ranch, and my grandmother taught me to cook when I was 10 years old. My husband and I (we have one married daughter) are retired now. To stay active, I bowl and do crafts. My collection of cookbooks keeps right on growing, too-I started it more than 50 years ago.

FIESTA BEAN DIP

This loaded queso dip is incredibly easy to put together and serves a crowd. It is always a big hit at our parties, and is very easy on the host. What I like about it is how chunky and substantial it is. Tends to be addictive too.

Steps:

  • This can all be heated up in a saucepan, but I like to do it in the microwave, in a large glass bowl.
  • Microwave refried beans, Velveeta and Ro-Tel together until the cheese is melted and ingredients are well mixed. Add black beans and zap until good and hot. Last, add the green onions and olives. If dip is too thick, thin with a little of the Ro-Tel juice. If necessary, heat to desired temperature.
  • Serve warm (a crock-pot is good) with tortilla chips. If you wanted a party presentation, some grated cheese, chopped tomato and or green onion sprinkled on top would be pretty.

FIESTA BEAN DIP - REVIEW BY VC GIRLS - ALLRECIPES.COM
I had high hopes for this dip but it disappointed. I found it to be very bland and boring. It’s very creamy and is a good lunch meal but it lacked flavor for my tastebuds. Easy to assemble and most likely will have these items in your pantry. Even after adding chili flakes, onion powder, cumin and hot sauce it still didn’t have the taste I was hoping for. Will not make again …
