- Preheat oven to 450 degrees. Thinly slice garlic. Halve and thinly slice fennel, leaving the core intact. Stem and seed bell peppers, and cut into 1/2-inch slices. Divide vegetables, grapes, and chickpeas, rinsed and drained, between two rimmed baking sheets.
- Drizzle each sheet with oil and toss with oregano, salt, and pepper, to taste.
- Place in oven and roast, rotating sheets once, until vegetables are golden brown and grapes are beginning to burst, about 25 to 30 minutes. Remove vegetables and any pan juices; transfer to a serving platter. Serve warm.

ROASTED FENNEL WITH PARMESAN

- Preheat the oven to 375 degrees F.
- Lightly oil the bottom of a 13 by 9 by 2-inch glass baking dish. Arrange the fennel in the dish. Sprinkle with salt and pepper, then with the Parmesan. Drizzle with the oil. Bake until the fennel is fork-tender and the top is golden brown, about 45 minutes. Chop enough fennel fronds to equal 2 teaspoons, then sprinkle over the roasted fennel and serve.

- Soak chickpeas overnight in 8 cups of cold water.
- Drain the peas, rinse, and transfer to a large pot.
- Add the other 8 cups of water, baking powder and bring to a boil.
- Reduce to low and cook uncovered for 1 1/2 hours or until peas are soft.
- Drain and place in a large bowl.
- Preheat the oven to 300 degrees.
- Slice the fennel lengthwise into thin strips and lay in a deep pan.
- Add wine, oil, garlic, salt and white pepper, and mix well with a wooden spoon.
- Spread the mixture evenly in the pan and bake for 45 minutes, or until the fennel is soft and has absorbed most of the liquid.
- As this bakes, separate the oranges into sections, and remove the membrane from each section using a paring knife.
- Transfer the roasted fennel to the bowl with the chickpeas and mix well.
- Add orange sections, lemon juice, and more salt and white pepper to taste.
FIRE-ROASTED CAULIFLOWER WITH WHIPPED CHICKPEAS AND CILANTRO PISTOU

- Preheat the oven to 475 degrees F. Put a 14-inch cast-iron pan in the oven while it preheats.
- For the cilantro pistou: Combine the cilantro, parsley, lemon juice, 1 to 2 cloves garlic (depending on how spicy you like it), 1 teaspoon kosher salt and 1 teaspoon black pepper in a blender. Turn on medium speed and drizzle in the olive oil to combine. Blend until it has a smooth consistency. Adjust with olive oil for desired thickness, or flavor with more salt and lemon as needed. Add the chile flakes, if using.
- Add the cauliflower and blended oil to a large bowl. Generously season with salt and toss to combine. Carefully pour into the preheated cast-iron pan and put back in the oven. Roast on the middle rack until brown and tender, 10 to 15 minutes. Crank the heat to broil for last 2 minutes for added color, if desired. (It should have color and be tender but retain a bit of crunch.)
- For the whipped chickpeas: Meanwhile, strain the chickpeas, reserving the liquid in a separate bowl. In a food processor, combine the chickpeas, olive oil, tahini, garlic, lemon juice, 1 teaspoon salt and 1/4 cup reserved chickpea liquid (aquafaba) and blend on high for about 2 minutes, scraping down the sides as needed. Add a bit more aquafaba (approximately 2 tablespoons) if the machine is struggling, then add 1 tablespoon at a time of water (up to 1/4 cup) until smooth and light. Season with salt and pepper.
- For the dukkah spice: Preheat the oven to 350 degrees F.
- Add the hazelnuts, pumpkin seeds, sesame seeds, coriander seeds, cumin seeds, sunflower seeds and fennel seeds to a small food processor and pulse until just combined. (Do not overprocess.) Add to a cast-iron skillet and toast in the oven for 5 minutes. Transfer to a bowl and season with the olive oil, salt and pepper.
- Generously spread the pillowy chickpea mixture on a platter. Top with the roasted cauliflower, then drizzle over the cilantro pistou and sprinkle generously with the dukkah.
CHICKPEAS AND FENNEL WITH RICE
Subtle and fresh, this has a gentle but memorable flavour. Contains lots of fibre and vitamin C. It is hearty but not heavy. And it's easy! The cooking time includes the time for soaking rice, so if you do not prepare it this way, you can save some time.

- Soak rice in pot for ten minutes in enough water to cover. When ten minutes are up, rinse the rice and add 1 cup fresh water. Cover and bring to a boil, then set on low heat to simmer for 8-9 minutes.
- While rice cooks, chop fennel bulb and put in pan with olive oil. Cook on medium heat until fennel begins to soften.
- Add chopped garlic, chickpeas, salt and pepper.
- When rice is finished cooking, turn off burner under rice and leave, covered, for ten minutes more (makes it fluffy).
- Add garam masala to chickpeas and fennel for remaining five minutes of cooking, while the rice is sitting, and add fresh fennel tops (the feathery parts) near the end of cooking (just to warm them up).
- Serve side by side on big plates, and enjoy!
VEGETARIAN SHEET PAN DINNER WITH CHICKPEAS AND VEGGIES
Adding chickpeas to root vegetables on a sheet pan makes for an easy dinner! Make sure to cut all the vegetables the same size or they won't cook properly!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a large sheet pan.
- Place chickpeas, butternut squash, onion, sweet potato, carrots, and russet potatoes on the prepared sheet pan. Drizzle with vegetable oil and toss to coat.
- Combine salt, black pepper, onion powder, garlic powder, ground fennel seeds, and rubbed sage in a bowl. Sprinkle over vegetables on the sheet pan and toss to coat.

CHICKPEA CURRY WITH A TOUCH OF FENNEL
Like most chickpea recipes, this tastes better the second day. The touch of fennel makes all the difference in this curry. This recipe may have come from the cookbook "A Taste of Madras."

- In a frying pan put the butter, diced onion, by leaves, cardamom (remove seeds from the pod and powder them), cinnamon, garlic, ginger, cloves, fennel seeds and the diced tomato.
- Fry over medium heat until the onion is golden. Use a large spoon to mash up the tomato as it cooks.
- Add the cayenne, ground cumin, ground coriander, paprika, salt, and fresh cilantro. Cook for 2 minutes.
- Add the chickpeas and their liquid. Cook until most of the liquid has evaporated and a thick sauce has formed.
- Turn off the heat and sprinkle with the lemon juice.
- Serve with rice or Indian bread.
- Notes: Instead of butter you can add ghee (clarified butter). Reduce the cayenne if you don't want it to be spicy.
