PEAR BANANA BREAD

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

Pear Banana Bread image

Steps:

  • Preheat oven to 350.
  • Mash bananas and pears in a bowl.
  • In a separate bowl, mix the rest of the ingredients until creamed together.
  • Stir in the fruit mixture.
  • Pour the batter into a greased loaf pan.
  • Bake for an hour and half.
  • Let cool for at least 10 minutes so it doesn't fall apart (it solidifies more with time).

2 pears, peeled, chopped
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt
2 eggs
1 teaspoon baking soda

Steps:

  • Heat oven to 350 degrees.
  • Peel and core pear. Mash the pear and bananas together. Stir in vanilla, rum and buttermilk. Set aside.
  • Whisk flours, salt, baking soda together in a bowl and set aside.
  • Cream butter and sugars together with an electric mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Reduce the mixer speed to low. Beat in half the flour mixture until just incorporated, followed by one-third of the banana mixture, continue to alternate until all ingredients are incorporated and the batter looks thick and chunky. Be careful not to over mix.
  • Pour the batter into a prepared 9 inch springform pan. Top with chopped pecans.
  • Bake for 35 - 45 minutes.

1/2 cup buttermilk
1 cup all-purpose flour
1 cup whole wheat flour

PEAR SNACKING CAKE WITH BROWN BUTTER GLAZE

This moist and tender cake has a similar texture to pumpkin or banana bread, with a delicate pear flavor scented with nutmeg and a touch of clove. But the real star is the brown butter glaze, which is nutty and rich, tasting a little like butterscotch, with a strong vanilla sweetness. The cake keeps well when stored in the refrigerator for up to 3 days, though the glaze will lose its snap from the chill. Or, bake the cake ahead, then glaze it a few hours before serving for the best texture. You can freeze the unglazed cake as well, up to a month ahead.

Pear Snacking Cake With Brown Butter Glaze image

Steps:

  • Prepare the cake: Heat oven to 350 degrees. Grease a 9-by-2-inch square or 9-inch-round pan and line bottom with parchment paper.
  • Using an electric mixer, beat butter until light and fluffy. Add sugars, baking powder, salt, vanilla, nutmeg, cloves and baking soda and beat for 1 minute. Beat in eggs, one at a time.
  • With the mixer on low, beat in half the pears, and then beat in the flour until smooth. Beat in remaining pears, then the oats, beating until well incorporated. Beat in nuts.
  • Spread batter in the prepared pan and bake until the top springs back when lightly pressed in the center of the cake, 40 to 50 minutes. Transfer to a wire rack to cool completely.
  • Prepare the glaze: In a small saucepan, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, about 3 minutes. It will smell nutty and rich when it's ready.
  • Whisk in brown sugar until it dissolves. Whisk in confectioners' sugar, cream, vanilla and salt until you've got a thick glaze with the texture of hot fudge sauce. Spread this over the cooled cake. Let the glaze set for at least 2 hours before serving.

  • Heat the oven to 180°C/fan160°C/gas 4. Grease and line a 1 litre loaf tin (approx 21.5cm x 11 x 7cm) with baking paper so it overhangs the short edges of the tin (see tip).
  • Mash the bananas in a mixing bowl, then stir in the melted butter and caster sugar with a wooden spoon until well combined. Stir through the pears, the maple syrup and vanilla extract, then beat in the egg. Sift in the flour and bicarbonate of soda, then gently fold in, along with the pecans, using a metal spoon.
  • Pour the mix into the loaf tin, then bake for 45 minutes to one hour. The cake should be dark on top with a soft, moist sponge. Check it’s done by poking a skewer into the centre – if it comes out clean it’s ready. Leave to cool in the tin for 10 minutes, then lift out onto a wire rack to cool. Drizzle with extra maple syrup to serve.
