Steps:
- Form 1/4 teaspoon of the blue cheese into a small ball; repeat with remaining cheese. Press the cheese balls into the walnuts to coat on one side. Place a cheese ball, nut side up, onto the top of each fig slice.
FIG AND GOAT CHEESE BITES
Steps:
- In a small skillet, combine the vinegar and olive oil and bring to a simmer over medium heat. Cook for 1 minute, then add the sliced figs. Simmer until the vinegar is reduced and syrupy, 1 to 2 minutes more. In a small bowl, stir together the goat and mascarpone cheeses. Spoon the cheese mixture into the pastry shells, top with a drizzle of honey, a sliced fig, and a drizzle of balsamic reduction. Chop up the dried apricots and set on the side of the pastry shells on the plate.

- Place goat cheese on a sheet of plastic wrap. Top with another sheet of plastic wrap and use a rolling pin to flatten into a 4x8-inch rectangle.
- Remove the top sheet of plastic wrap and cover goat cheese with slices of prosciutto, slightly overlapping the edges. Cover prosciutto with a new sheet of plastic wrap and flip both sheets over so the goat cheese layer is now facing up.
- Remove top sheet of plastic wrap. Cover goat cheese evenly with figs, basil, and black pepper. Starting from the long edge, roll tightly to form a log. Wrap log in plastic wrap and refrigerate at least 2 hours.

I bought fresh figs at the farmer's market and the grower shared this simple and delicious fig preparation with me. We had it for a Father's Day dinner appetizer and it is fantastic!

- Cut the figs in half lengthwise and put a tablespoon of blue cheese on top of each half. Top this mixture with a teaspoon of balsamic vinegar.

- 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
- 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
- 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
- 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
- 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.

These Fig and Brie bites are the easiest fall appetizer, and are just as delicious. Creamy Brie is stuffed into puff pastry squares with tangy fig jam and salty bacon, then baked until golden brown. Garnish with fresh thyme for an herbaceous finish!

- Preheat the oven to 400°F (200°C). Grease a mini muffin tin with nonstick spray.
- On a lightly floured surface, roll out the sheets of puff pastry and cut into 24 2-inch squares. Place each pastry square in a muffin cup, pressing down so the pastry is flush with the bottom.

- Preheat oven to 425°; line a baking sheet with parchment paper.
- In a small custard dish mix the egg yolk and water with a fork (this is the egg wash); set aside.
- Break or cut the blue cheese into 24 small pieces (about ¼ inch); let stand at room temperature to soften.
- Unfold the pastry sheet on a lightly floured surface; with a lightly floured rolling pin, roll out pastry to a 10-inch square.
- Using a 1 ½ inch round cutter, cut out 24 pastry rounds from pastry sheet.
- Place rounds 1 inch apart on baking sheet; brush tops of rounds with egg wash.
- Bake rounds in the middle of oven for about 12 minutes, until puffed and golden brown (rounds will puff unevenly).
- Transfer rounds with a spatula to a rack; cool slightly; trim bottoms of rounds, if necessary, to create level pastries; cool completely on rack.
