PASSOVER APPLES AND HONEY (CHAROSET)

Simple, quick and tasty. These ingredients go together very well. Chop the apples and walnuts depending on how coarse or fine you like the texture.

Passover Apples and Honey (Charoset) image

Steps:

  • In a bowl, mix the honey, cinnamon, apples, grape juice, and walnuts together until thoroughly combined.

¼ cup ground cinnamon, or to taste
5 cups peeled and chopped apples
2 cups grape juice
1 cup chopped walnuts

CHAROSET

A simple recipe for this traditional Passover staple. I always make a great deal extra to munch on for days! Mixture will turn the appropriate shade of brown to look like the mortar which it represents. You can substitute sugar for the honey, if desired.

Steps:

  • Mix apples, walnuts, grape juice, honey, and cinnamon together in a bowl. Cover the bowl with plastic wrap and refrigerate until chilled, 8 hours to overnight.

2 Granny Smith apples, peeled and coarsely grated

In addition to its traditional role on the Seder plate, this charoset is delicious as a condiment for duck or roast beef.

Fig and Port Wine Charoset image

Steps:

  • In small saucepan, combine port and figs. Set over high heat and bring to boil. Reduce heat and simmer, uncovered, until figs are softened and port is slightly reduced, about 15 minutes.
  • Meanwhile, in large heavy-bottomed skillet over moderately high heat, heat oil. Add onions and cook, stirring often, until lightly caramelized, about 20 minutes. Remove from heat and cool slightly.
  • In large bowl, combine fig/port mixture, onions, pine nuts, and pepper. Serve at room temperature.

1 cup ruby port
1 cup black Mission figs, finely chopped
3 tablespoons vegetable oil
2 cups finely chopped Vidalia or other sweet onions
1/3 cup pine nuts, lightly toasted (optional)
1/4 teaspoon freshly ground black pepper

Fig-Walnut Sweet Potato Casserole Boats image

Steps:

  • Bake sweet potatoes until done-around 1 hour.
  • Mince figs.
  • When cool enough to handle scoop out potatoes and place in a large bowl-reserve jackets.
  • Add remaining ingredients except butter and whip well.
  • Restuff jackets and dot tops with 1/2 t.
  • butter each.
  • Bake at 350 for around 20 to 30 minutes.
