SOY DREAM NOG (DAIRY-FREE EGGNOG)

This is a great substitute for traditional, dairy-filled eggnog! I modified it from a recipe on the Soy Dream website. The original recipe called for 1/4 cup Amaretto, Southern Comfort, brandy, or alcohol of your choice. That would be great for special occassions, but I wanted a non-alcoholic version to drink on a regular basis, and this worked out great. It's frothy and delicious. If you like your eggnog even creamier, feel free to add a couple more ounces of tofu.

Soy Dream Nog (Dairy-Free Eggnog) image

Steps:

  • Combine all ingredients in a blender until smooth and frothy.
  • Refrigerate before serving.

1 quart soymilk (plain or vanilla) or 1 quart rice milk (plain or vanilla)
6 ounces extra-firm silken tofu (I use Mori Nu)
6 tablespoons maple syrup
1 teaspoon rum extract
2 teaspoons vanilla (I only use 1 tsp with vanilla rice milk)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves

DAIRY-FREE EGGNOG

This is a traditional eggnog with substitutes for the milk and cream. It's still rich, because it contains eggs and coconut milk. Use pasteurized eggs, if you can find them.

Dairy-Free Eggnog image

Steps:

  • Beat egg yolks until they are lemon-colored. Gradually add the 1/3 cup sugar and continue to beat until completely disolved.
  • In a medium saucepan, combine the hemp milk, coconut milk and nutmeg. Heat to boiling, stirring occasionally.
  • Gradually temper the hot mixture into the egg mixture. Return everything to the pot and cook over medium heat, stirring constantly, until the mixture reaches 160 degrees F.
  • Remove from heat and add rum or extract. Place in the refrigerator to chill.
  • When mixture has chilled, beat the egg whites to soft peaks. Gradually beat in the 1 Tablespoon of sugar and beat until stiff peaks form. Whisk the beaten egg whites into the chilled mixture.

4 egg yolks
1/3 cup sugar, plus
1 tablespoon sugar
2 cups soya milk (I prefer hemp milk)
1 cup organic coconut milk (use full fat)
1 ounce rum or 1 teaspoon rum extract
1 teaspoon freshly grated nutmeg
4 egg whites or 3/4 cup pasteurized liquid egg-whites

COCONUT MILK EGGNOG (SOY AND DAIRY FREE)

I love eggnog but can't have the dairy. Then it occurred to me that it would be great made with coconut milk - which is my milk substitute of choice. I couln't find a recipe here that just called for coconut milk, so I searched the web where I found many sites posting such a recipe as all of the sites that I looked at posted the same recipe, I am not crediting where it came from. I also like this recipe because everything gets cooked. I haven't tried it yet because I wanted to post it on here so I could easily calculate the ingredients for a smaller batch as it is just for me. Prep time is estimated - total time includes chilling time.

Coconut Milk Eggnog (Soy and Dairy Free) image

Steps:

  • Heat, but do not boil, coconut milk and honey.
  • Beat egg yolks with vanilla extract.
  • Add half of coconut milk mixture to egg yolks and stir.
  • Add back into remaining coconut milk and stir.
  • Cook over low heat, stirring constantly, until egg nog thickens and coats the back of a spoon.
  • Stir in cinnamon and nutmeg (Note that cinnamon and nutmeg will not dissolve, so you may wish to add them when you drink it.).
  • Allow to cool to room temperature, add rum now if you choose.
  • Then cover and refrigerate 3 hours before serving.

This recipe was given to me a long time ago and it still serves as the best homemade egg nog ever tasted hands down. This is great for Christmas or holiday parties. Liquor is part of the ingredients (I have not made it without liquor), but the liquor does not overpower the egg nog taste you are looking for.

Steps:

  • In a medium bowl, beat egg whites until almost stiff.
  • Add sugar gradually to egg whites until stiff (wash beaters!).
  • In another bowl, beat whipping cream until stiff.
  • In a third bowl, beat egg yolks until thick.
  • Stir in liqueur and ice cream. Beat on low speed until just smooth.
  • Pour mixture into a punch bowl or into a pitcher.
  • Fold in egg whites, then fold in whipped cream.
  • Sprinkle with nutmeg for taste.

Steps:

  • Mix the milk and non-fat milk for 30 seconds in a blender. Add 6 egg yolks and mix until combined.
  • In a bowl mix the 2 teaspoons unflavored gelatin and the sugar. Add the gelatin/sugar to the milk/yolk mixture and blend until combined. Add heavy cream until well blended.
  • Pour mixture into a saucepan and heat over medium heat until temperature reaches 160 degrees. Refridgerate for 12 hours.

  • Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
  • Mix together first 3 ingredients in a large heavy saucepan. Set aside.
