SOY DREAM NOG (DAIRY-FREE EGGNOG)
This is a great substitute for traditional, dairy-filled eggnog! I modified it from a recipe on the Soy Dream website. The original recipe called for 1/4 cup Amaretto, Southern Comfort, brandy, or alcohol of your choice. That would be great for special occassions, but I wanted a non-alcoholic version to drink on a regular basis, and this worked out great. It's frothy and delicious. If you like your eggnog even creamier, feel free to add a couple more ounces of tofu.

DAIRY-FREE EGGNOG
This is a traditional eggnog with substitutes for the milk and cream. It's still rich, because it contains eggs and coconut milk. Use pasteurized eggs, if you can find them.

Steps:
- Beat egg yolks until they are lemon-colored. Gradually add the 1/3 cup sugar and continue to beat until completely disolved.
- In a medium saucepan, combine the hemp milk, coconut milk and nutmeg. Heat to boiling, stirring occasionally.
- Gradually temper the hot mixture into the egg mixture. Return everything to the pot and cook over medium heat, stirring constantly, until the mixture reaches 160 degrees F.
- Remove from heat and add rum or extract. Place in the refrigerator to chill.
- When mixture has chilled, beat the egg whites to soft peaks. Gradually beat in the 1 Tablespoon of sugar and beat until stiff peaks form. Whisk the beaten egg whites into the chilled mixture.
COCONUT MILK EGGNOG (SOY AND DAIRY FREE)
I love eggnog but can't have the dairy. Then it occurred to me that it would be great made with coconut milk - which is my milk substitute of choice. I couln't find a recipe here that just called for coconut milk, so I searched the web where I found many sites posting such a recipe as all of the sites that I looked at posted the same recipe, I am not crediting where it came from. I also like this recipe because everything gets cooked. I haven't tried it yet because I wanted to post it on here so I could easily calculate the ingredients for a smaller batch as it is just for me. Prep time is estimated - total time includes chilling time.

Steps:
- Heat, but do not boil, coconut milk and honey.
- Beat egg yolks with vanilla extract.
- Add half of coconut milk mixture to egg yolks and stir.
- Add back into remaining coconut milk and stir.
- Cook over low heat, stirring constantly, until egg nog thickens and coats the back of a spoon.
- Stir in cinnamon and nutmeg (Note that cinnamon and nutmeg will not dissolve, so you may wish to add them when you drink it.).
- Allow to cool to room temperature, add rum now if you choose.
- Then cover and refrigerate 3 hours before serving.

HOMEMADE DECADENT EGGNOG
This recipe was given to me a long time ago and it still serves as the best homemade egg nog ever tasted hands down. This is great for Christmas or holiday parties. Liquor is part of the ingredients (I have not made it without liquor), but the liquor does not overpower the egg nog taste you are looking for.

- In a medium bowl, beat egg whites until almost stiff.
- Add sugar gradually to egg whites until stiff (wash beaters!).
- In another bowl, beat whipping cream until stiff.
- In a third bowl, beat egg yolks until thick.
- Stir in liqueur and ice cream. Beat on low speed until just smooth.
- Pour mixture into a punch bowl or into a pitcher.
- Fold in egg whites, then fold in whipped cream.
- Sprinkle with nutmeg for taste.

CALDERS EGGNOG
Calders Dairy is a very well known Dairy farm in Michigan. They had an outlet in Lincoln Park, Michigan that I used to go to all the time growing up. They had the most sinful eggnog. :) Here is the recipe as it was given to me. It is rich and creamy.

- Mix the milk and non-fat milk for 30 seconds in a blender. Add 6 egg yolks and mix until combined.
- In a bowl mix the 2 teaspoons unflavored gelatin and the sugar. Add the gelatin/sugar to the milk/yolk mixture and blend until combined. Add heavy cream until well blended.
- Pour mixture into a saucepan and heat over medium heat until temperature reaches 160 degrees. Refridgerate for 12 hours.
- Add 1 teaspoon vanilla, the rum and nutmeg. Blend well and serve.
- Note* Cooking time varies, so it is a estimate. Please watch your temperature. The 12 hour chilling time not added to the final prep time.

VEGAN EGGNOG
This is my family's favorite vegan nog recipe! We keep banana slices in the freezer so they're always ready. The banana makes it thicker and creamier than many other homemade nogs we've tried, but doesn't give a strong banana taste. We think it's similar to commercial vegan nogs, but a lot cheaper! We use a Magic Bullet blender to blend.

- Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
- Mix together first 3 ingredients in a large heavy saucepan. Set aside.
- Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.
- Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.
- Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.
- 15 servings. Prep time : 20 minutes, cooking time: 5-10 minutes.
- Land O' Lakes Fat Free Half and Half.
- It looks and tastes like half and half, but it's made mostly of skim milk (and a little carrageenan for body) instead of half cream and half whole milk. That can revolutionize a typical Fettuccine Alfredo recipe, which could easily call for a quarter-cup (or more!) of heavy cream per serving, at the unsightly cost of 22 grams of fat, 14 of them saturated -- not including the butter or Parmesan cheese.
- With Fat Free Half and Half, those numbers drop to zero, but the flavor doesn't budge.
- You can also indulge in a tablespoon or two of Land O' Lakes for your coffee, macaroni and cheese, or mashed potatoes. You won't save as much because each tablespoon of whole milk or real half and half has only a gram or two of fat. But if you use two or three tablespoons per cup of coffee -- and drink two or three cups a day -- maybe a pint of Fat Free Half and Half belongs in your fridge.
