"I'm from Finland and have several native recipes that I've altered over time to appeal to American tastes," explains Sirpa Jarvis of The Plains, Ohio. "This refreshing dessert gives folks a taste of my homeland."

Steps:

  • In a large heat-proof bowl, combine fruit and 2 tablespoons sugar. In a saucepan, combine cornstarch and juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool for 10 minutes. Pour over fruit; toss to coat. Sprinkle with remaining sugar. Cover and refrigerate until chilled. Serve in individual dessert dishes; top with frozen yogurt if desired.

Steps:

  • In a large heat-proof bowl, combine the fruit with 2 tablespoons of sugar.
  • In a saucepan, combine the cornstarch and juice until smooth; bring to a boil and cook and stir for 2 minutes or until thickened.
  • Remove for heat and allow to cool for 10 minutes; pour the mixture over the fruit tossing to coat.
  • Sprinkle with remaining sugar, cover and refrigerate until chilled.
  • To serve, spoon the fruit into individual dessert dishes and top with frozen yogurt if desired.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C), and line a 9x13 inch baking pan with parchment paper.
  • Beat 3/4 cup sugar with the butter until the mixture is smooth and creamy, and beat in the egg. Add the baking powder, and stir in the flour, 1/2 cup at a time, alternating with a few tablespoons of the milk, until all the flour and milk have been incorporated. The dough will be sticky, like sugar cookie dough. Spread the dough into the prepared baking dish, creating a raised edge of dough around the dish.
  • Place the blueberries in a bowl with 1/2 cup of sugar, and mash the berries with a potato masher. Spread the blueberry mixture on top of the crust in an even layer.
  • Bake in the preheated oven until the crust has browned slightly and the filling is thickened and bubbling, 15 to 25 minutes.

Steps:

  • To make the pastry:
  • Using an electric mixer, beat the butter and sugar until light and creamy. Whisk in the egg.
  • Mix the flour and the baking powder together and stir into the dough.
  • Place the dough in a greased 9 inch tart pan or pie plate and flatten on the bottom and sides using your fingers (add a little bit of flour if the dough is too sticky to handle).
  • For the Filling:.
  • Mix the berries with the cornstarch, then place berries in the prepared crust.
  • Mix together the sour cream, egg, vanilla sugar and sugar and spoon the filling on top of the berries.
  • Bake in 350F oven for about 30 minutes or until the pastry has browned and the filling seems set.
