CILANTRO AVOCADO LIME DRESSING

TONS of flavor in this thick and creamy salad dressing. I created this to substitute for my absolutely favorite creamy cilantro dressing minus the dairy to make it vegan and Whole30-friendly.

Steps:

  • Combine all ingredients in a blender and process until smooth and creamy.
  • Serving size is 2 tablespoons.

1/2 ripe avocado
1 bunch fresh cilantro, remove thick stems
1/2 inch fresh ginger, cube
1 lime, juice of
2 teaspoons balsamic vinegar
1/4 teaspoon salt
1/2 cup coconut oil

This salad works great as an appetizer or as an entree. The heat of the habanero's mixed with the coolness of the yogurt dressing is just right!

Fire Shrimp Salad with Cilantro Lime Dressing image

Steps:

  • Saute garlic and butter with minced Habenero.
  • Add Shrimp and cook until pink.
  • Mix yogurt, lime, cilantro and salt/pepper in a small bowl.
  • Place a handful of greens on each serving plate along with 5-6 shrimp.
  • Drizzle dressing over salad and enjoy!
