HOMEMADE FLAT BREAD

Steps:
- In the bowl of a food processor combine the yeast, sugar, flour, salt and thyme. Pulse to combine. Add the water in a steady stream until the dough begins to form a ball, turn it on to a board and knead with the heel of your hand until the dough is smooth and elastic.
- Coat a bowl with oil. Place dough in bowl, and cover with a damp cloth. Put in a warm spot to rise until double in size, about 1 hour.
- When the dough has doubled in size, punch the dough, scrape it onto the counter and knead it lightly into a smooth ball. Cut into 20 pieces and with a rolling pin roll out to form very flat 5 to 6-inch circles.
- Preheat a stove top grill pan over medium high. Do not oil. Place bread on hot grill and cook without touching it until you see bubbles on the surface, about 1 to 2 minutes. Turn and continue to cook 1 to 2 minutes more or until bread has puffed up. Serve immediately.
10-MINUTE CHICKEN FLATBREADS WITH HUMMUS AND YOGURT

- Toss chicken with cumin, kosher salt, and pepper in a medium bowl. Heat 1 Tbsp. oil in a large skillet over high. Add chicken mixture and cook, stirring occasionally, until lightly browned and cooked through, about 5 minutes. Transfer to a serving bowl.
- Meanwhile, heat broiler. Divide cucumbers and tomato among small serving bowls. Spoon hummus and yogurt into separate serving bowls. Broil pitas just until warmed, about 2 minutes.
- Serve chicken, cucumbers, tomato, hummus, yogurt, and parsley, if using, with lemon wedges, sea salt, and more oil alongside so everyone can assemble their own flatbreads as desired.
SKILLET GARLIC FLATBREAD
This goes so well with Mexican or Indian soups, lentils, beans, or chilies. I'm sure you could also use as a base for quick pizzas or brush with garlic butter for a tasty treat on its own!

- Mix flour, baking powder, and salt in a large bowl; add butter and crush into the flour mixture with hands until it resembles breadcrumbs.
- Mix hot water and garlic into the flour mixture until it all comes together into a dough; turn out onto a cutting board dusted with flour. Knead dough 3 or 4 times. Cut dough into 10 pieces, roll into balls, and flatten into discs.
- Cover dough with a clean kitchen towel and let sit for 20 minutes.
- Heat a cast-iron skillet over-medium high heat.
- Roll out one of the dough discs to about the size of your skillet. Cook in hot skillet until golden and puffy, 1 to 2 minutes per side. Remove to a platter and cover with a clean kitchen towel to keep warm. Repeat with remaining dough portions.

This isn't authentic flatbread - it's a cheat. However, it's incredibly easy and quick to make, and it works in a pinch for serving with an Indian meal.

Steps:
- Between two sheets of wax paper, roll out each biscuit into a 6-in. circle with a rolling pin or a large soup can. It might be difficult, because the dough is springy, but press kind of hard.
- In a small, nonstick skillet over medium-low to medium heat, cook each biscuit for 60 seconds on each side, or until golden brown.
- DO NOT put any oil in the pan. Cook them in a completely dry pan.
- Stack the bread on a plate and cover with foil to keep warm.

FLATBREAD
Steps:
- Mix water and yeast and let stand 15 minutes. Gradually pour in 2 cups of the flour mixture and incorporate. Mix for about 1 minute to form a sponge. Let stand, covered for at least an hour. Put sponge in the bowl of a Kitchen Aid. Using the dough hook, add the salt and oil, then flour 1/2 cup at a time to form a dough. Remove from bowl and knead. Place in a clean oiled bowl and let rise, slowly, about 2 1/2 hours. Divide dough into three balls, let rise again for 1/2 hour and roll out. Transfer dough to oiled baking sheet to 400 deg oven and bake 10-15 minutes, or untill golden brown.
FLATBREAD
I got this recipe from a Epicurean Cooking School when my DD had a birthday party there. This recipe is not fast, but it is easy. It makes a very thick and chewy flatbread (it makes a great pizza crust, too, just bake at 425 for 10 minutes for small pizzas and 15-20 for a big one). The cooking times are in reality 30 minutes prep time, 1 hour rise time, 30 minutes cook time (active work, though).

- In a standing mixer fitted with a dough hook, proof the yeast by dissolving it in the warm water with the 2 tablespoons of sugar. Let stand 2 minutes. The mixture should look foamy and start to smell yeasty.
- Turn mixer on low and start adding the flour. How much you add depends on the humidity, you want it to not be a really sticky dough. Once you have the whole wheat flour and 2 cups of the white flour in, add the salt water, and then the oil. Let this come together into one mass and then check to see whether it needs more flour or not. If needed add, some flour, let it mix a while and test again.
- Then set your mixer to medium speed and let it knead your dough until it becomes elastic and smooth, maybe 8 minutes, scraping down the dough ball occasionally.
- Turn the dough out onto a work surface, and fold it over a few times, forming it into a nice smooth ball. Place this into a bowl that has been lightly oiled and roll it around a few times to completely cover the ball. This will prevent the dough ball from forming a skin on it while it is rising. Cover the bowl with plastic wrap.
- Place in a warm place until it doubles in size, 45 minutes to one hour.
- Once it has doubled, take dough and separate it into 6 smaller balls. On a clean unfloured surface, roll out each of these balls to about a 1/2" thickness.
- Heat a heavy skillet over medium high heat. Do not use non-stick for this. Once your pan is very hot, place one flatbread in it. Turn after 2 minutes. Remove after 2 more minutes. Repeat with the rest of the flatbread.
