GLUTEN-FREE BISCUITS

Basic gluten-free biscuits are fantastic with brunch, dinner or even a bowl of soup for an easy lunch. This recipe is perfect for tweaking-stir in your favorite ingredients like shredded cheddar and garlic powder, Swiss and chives, or Parmesan and Italian seasoning. -Taste of Home Test Kitchen

Steps:

  • Preheat oven to 425°. In a large bowl, whisk the first 6 ingredients. Cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times., Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm.

This recipe was found the bag of guar gum I purchased from Bob's Red Mill. These are absolutely the best tasting gluten free biscuits ever.

Steps:

  • Preheat the oven to 450°F Lightly spray a baking sheet with non-stick cooking spray and set aside. In the bowl of the food processor that has been fitted with the metal blade, add the flour through salt. Pulse a couple of times to combine.
  • Cut the shortening into small pieces and add to the flour mixture. Pulse several times to incorporate. Beat together the milk and egg white. Add to the processor bowl and mix until dough forms a ball and pulls away from the bowl.
  • Lightly flour a cutting board or counter top with the all-purpose baking flour and turn out the dough. With wet hands pat dough down, sprinkle lightly with additional flour and roll gently to 3/4 inch thickness. Use a lightly floured 2" biscuit cutter to cut into 6 biscuits. Place on prepared baking and bake 12 to 15 minutes. Half way through baking, brush the tops with melted butter.

  • Preheat oven to 400 degrees F (204 C) and set out a baking sheet. To a large mixing bowl, add potato starch (not flour), almond flour, cornstarch, sea salt, baking powder, cane sugar, and nutritional yeast (optional) and whisk to combine.
  • Add vegan butter and use a pastry cutter, whisk, or fork to "cut" the oil into the flour until small bits remain (see photo). (We tried using coconut oil and while it did work, vegan butter yields a much fluffier, more tender, flavorful biscuit).
  • Add the light coconut milk to the dry mixture and gently stir with a spoon to combine. You're looking for a semi-sticky dough and you may not use all of the coconut milk. If it looks too wet, compensate with 1-2 Tbsp at a time of almond flour or potato starch. Add more coconut milk if it is too crumbly.
  • Transfer your dough onto a well (gluten-free) floured surface and dust the top with a little potato starch or almond flour. Handling as little as possible, form into a 1-inch-thick disc with your hands (these biscuits don’t puff up as much as their gluten-containing cousins, so only push the dough down as much as you desire them to be thick).

  • Preheat Oven and Prepare Pan. Adjust oven rack to middle position and heat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk the Dry Ingredients. Whisk together gluten-free flour, sugar, baking powder, baking soda, and salt in a large bowl. Take your time with this step to ensure the ingredients are thoroughly combined.
  • Make the Dough. Using your hands or a pastry cutter, cut butter into the flour mixture until the butter is about the size of peas. Make a well in the center of the bowl and add one cup of yogurt. Stir the mixture together with a wooden spoon and then knead a few times (in the bowl with your hands.) If dry flour remains in the bottom of the bowl, add an additional tablespoon of yogurt. Repeating as needed. The dough should easily hold together. It shouldn't be dry or too soft and squishy.
  • Cut Dough into Rounds. Dust your countertop with gluten-free flour. Turn dough out onto the counter and press it into a rectangle, about 1 1/4 inches thick. Cut into three or four rounds using a 1 1/2 inch biscuit cutter. Place biscuits on the prepared baking sheet. Gather the remaining dough together, kneading and patting it into a rectangle and cut out additional biscuits. Repeat. You should have 8-9 biscuits at the end.If the dough seems soft or warm, chill for 15 minutes.
