FOIL-WRAPPED STEAK

Foiled again..!! The favorite part of this meal will be the easy clean-up. The foil holds the juices in while the soup mix flavors the meat and vegetables. Great recipe for camping too.

Steps:

  • Preheat oven to 350°F (175°C)
  • Place chuck steak on a large enough piece of aluminum foil to completely cover meat and vegetables. Place in center of a baking sheet; spread dry soup mix on top of steak meat.
  • Add potatoes, carrots and butter on top. Seal foil and bake 1 to 1 1/2 hours, or until vegetables are soft. Remove from oven and serve hot.

1 (1 1/2 lb) chuck steaks
1 (8 ounce) package beefy onion soup mix or 1 (8 ounce) package savory herb with garlic soup mix
3 potatoes, peeled and sliced
3 carrots, peeled and sliced
2 tablespoons butter or 2 tablespoons margarine

As a park ranger, I've cooked a lot of meals outdoors. I often assemble a steak and potato foil pack and toss it into my backpack with some ice. Then when I set up camp, it's easy to cook over a campfire. If I'm at home, I use my grill, and the food is just as good. -Ralph Jones, San Diego, California

Steps:

  • Prepare grill for medium heat or preheat oven to 450°. Cut each steak into 4 pieces, for a total of 8 pieces. In a large bowl, combine steak, potatoes, onion, rosemary, garlic, salt and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets on grill or in oven; cook until potatoes are tender, 8-10 minutes on each side. Open packets carefully to allow steam to escape. If desired, sprinkle with additional rosemary.

Steps:

  • 1. Trim the ligament and fat from the round steak.
  • 2. Place double layer of aluminum foil in bottom of shallow baking pan (9x15x2 or thereabouts in size).
  • 3. Place meat on foil.
  • 4. Spread unmelted butter on top of meat, season with garlic powder, pepper and half of worcestershire sauce or powder.
  • 5. Pile vegetables on top.
  • 6. Top with remaining worcestershire.
  • 7. Cover with 2 additional layers of foil, wrap tightly to keep steam and juices inside.
  • 8. Bake 2 1/2 hours in 350 oven.

2 lb round steak
2 Tbsp butter
1 tsp garlic powder
1/2 tsp black pepper
1 large onion, sliced
1 bell pepper, sliced
1 carrot, shredded
1 celery ribs, bias cut 1 inch
1 Tbsp worcestershire sauce
